What are your favourite recipes for using up cucumbers and courgettes?

I ended up with more plants surviving that expected and now getting a glut of cucumbers and courgettes- what are your go to recipes for either meals or preserving/storing them?

Courgettes: bhajis fried until cooked but not quite as brown as you would serve. Freeze on open trays and bag up.

Cucumbers: German gurkensalat or creamy gurkensalat
or if really hot, soak cucumber and thinly sliced spanish onion in vinegar. Sandwich in white sliced bread.

My friends husband (German) makes an amazing cucumber salad by slicing cucumbers, then mixing with sour cream, white wine vinegar, dill and a bit of Dijon mustard.

Its really good.

If you have small courgettes half them lengthways and griddle them then top with sauce vierge or fresh pesto

Enormous courgettes are lovely stuffed with spiced rice. It can contain mince or you can do a veggie version.

Cucumbers grated and mixed with yoghurt, lemon juice, herbs and garlic make a really nice accompaniment to bbq meats or curry.

Well the cucumbers are coming thick and fast so I'm going to do some pickling today. Unfortunately my regular, green courgette plants failed, but the yellow one and patty pans are starting to fruit which is good.

I made a really tasty dip by slicing courgettes (even small marrows) thinly and roasting them with some garlic cloves. Then blended them up with lemon juice, mint and oregano. It comes out a bit like a low calorie version of guacamole.

I often thinly slice (or grate) and cook down two courgettes in olive oil with salt and pepper until they release most of their liquid and get a bit of colour, add a shallot or two and cook down until they’re silky and brown, make two holes and crack a couple of eggs in, cover until set. Completely delicious.

Instead of eggs you can add garlic, al dente pasta, a splash of pasta water and Parmesan and move it around for a couple of minutes to finish the pasta and emulsify the sauce. Also delicious.

It’s a long time since I’ve made them (DH didn’t like them) which was grating potato and courgette, squeezing all the water out. Adding feta and mint and frying them in patties. These were lovely!

I made a nice courgette dip/ pate last night
grated a big courgette and then tossed in a bit of olive oil and roasted for about 30 mins till it had gone shrivelled and a bit crispy
then stirred in to some Greek yoghurt with a spoonful of tahini and a bit of cumin
was actually delicious

I basically chop courgette and add it to all and sundry - I’ve used it in chilli/curry/stir fry last week. I also make a crust less quiche using courgette leeks and peas that I have for lunch.

Just reminded of this thread as I eat this pasta warmed up. Really tasty, although if I did it again I’d blend the sauce and not just mash with a masher like she did.
