What are your favourite recipes for using up cucumbers and courgettes?

I ended up with more plants surviving that expected and now getting a glut of cucumbers and courgettes- what are your go to recipes for either meals or preserving/storing them?

I always do the salting thing with aubergines when making moussaka, a faff, but worth it, so I imagine it's the same with courgettes.

It's a different effect with courgettes it's sort of denser and more satiny. I definitely recommend it.

We have a glut, and tonight it's courgette and dill fritters with salmon fillets and some extremely tiny spuds from the ones I was growing that DP accidentally dug up too early.

Battered/tempura courgette flowers. Just dip the flowers in the batter, then shallow fry in a generous amount of oil. Thin batons of courgette in the same batter are also good.

Courgette and ricotta pasta: thinly slice an onion and fry in olive oil until starting to soften. Add thin batons of courgette and fry. I usually do 2-3 courgettes to feed 4. Separately, cook pasta in salted water, reserving some of the cooking water. Combine the drained pasta with the courgette and onion, along with a generous amount of ricotta and some of the reserved pasta water if needed to loosen. Serve with lots of parmesan. Optional additions: toasted pine nuts or lemon zest.

I have been slicing up courgette and putting them in a jar of vinegar and having as a side with almost everything and on sandwiches. It's great for digestion, lowers blood glucose too

Cucumbers go nicely in tzatziki. Courgettes can go in a Greek filo pastry pie with mint and feta cheese or in a soup with onions, oregano and Philadelphia cheese.

Yes to these, they are delicious! And for the cucumber, a G&T (although thats probably not very helpful!)

Thanks everyone. I certainly have some great recipes to get me through summer. I tried the German cucumber salad last night with cod and it was delicious!

Cucumber is good in smoothies. Doesn’t really taste of anything but adds a coolness.

I like making stuffed courgettes.
I cut them lengthwise and hollow them out.
Then chop the middle bit along with garlic, home made breadcrumbs, seasoning and herbs. Maybe some Parmesan on top. And I put Ayvar on first then add the stuffing. You have to press it down quite a bit. They take about an hour to cook.

My courgettes are still at blossom stage. 😂 But my neighbours aren’t, so tonight we’re having courgette and sweetcorn chowder with crispy pancetta and baguettes with butter.

Cucumbers, I can make endless pots of cucumbers sliced and marinated in soy sauce, sesame oil, bit of vinegar, sugar, garlic, chillies, coriander, could also throw in some peanuts as well. It’s great as an accompaniment to any Asian rice or noodle dishes. I often have with miso noodles and a boiled egg for breakfast or lunch.

Peel courgettes and use in soups etc. Kids eat them if they can't see the green

do you have a carrot cake recipe that you like? you can substitute courgette for carrot. it's a little more moist that way.

I grate courgette and cook it with chilli, garlic, lemon juice and rind, add Parmesan and serve with linguine.

Perfectly grilled courgette. Olive oil, lemon and chilli dressing with some basil and feta scattered. Amazing
