So far I’ve got the ubiquitous chicken salad with new potatoes and a Gousto recipe for honey and harissa salmon.

Now I’m beginning to struggle, I really don’t want to spend ages in the kitchen.

So what’s everyone else having?

I have bought lots of salad ingredients and stuff for skewers. 15 minutes in air fryer.

Lots of salads like salmon Caesar, chicken Caesar, blue, cheese, pear, walnut, steak and blue cheese,
ploughman's with nice cheeses, nice pickles , red cabbage, nice breads and apple or pear,
mozzarella, Parma ham, grapes,
fruits and ice creams like banana split.

In Scotland, so the most we can hope for is a pleasantly warm day with no rain, but I’m still having watermelon and feta salad.

We’re bbq today for Father’s Day. I’m thinking about cooking a chicken today or first thing in the morning for salad tomorrow. I’ve got salmon for Tuesday doing a tray bake with orzo so quick and easy and light to eat. I picked up a crispy chicken wrap kit this week too, so quick in the airfryer chop a salad and it’s done. Might Chuck a chilli in the slow cooker one day again easy and no hot pans just rice in the rice cooker. I’m sure there will be plenty of leftovers from one or two meals to make loaded nachos with chicken maybe just move everything else on a day, chilli is lovely to make sloppy joes the next day.

I love the food in this weather - light easy meals that seem more sociable somehow

Bbq today then various salads and either our ready meals from freezer or something quick like stir fry. We do usually cook normally during heat, but decided we have excuse to be bit lazy with it and empty readymeal stock to make new different ones when it vools down😁

Going out today but otherwise I'd be fancying a normal Sunday roast.

I never have any impetus to change my diet in heat or cold.

Didn’t mean to sound so grumpy. I do love summer food though, so enjoying reading all your meal plans. I did ITSU gyoza dumplings with toppings of spring onion and ginger and tempura vegetables last night. That went down well with lemon tea to drink.

I'll be cooking things like lasagne and cottage pie in the early morning or the night before so I don't have to do it while it's really hot. Then I will do salad to have with it and the dc will whinge about the lack of cooked vegetables.

This is interesting, @DappledThings I really do fancy different meals with the changing seasons and I don’t like how I appear to be following the lead of the supermarket marketing department but when its autumn I really do want casseroles and shepherds pie and in summer I want all the freshness.

We’re having a lot of “snacky meals” (also known as picky bits but I hate that phrase). So cold meats, veg or fruit, cheese and crackers. Some pasta meals. Basically nothing that needs doing in the oven.

Probably the same selection several days in a row while it's hot...

I used to stay with a family in Italy each summer. Every few days they would make a big batch of minestrone, then each evening reheat what we needed. We'd eat it outside at about 9pm with bread and cheese and fruit, and it was wonderful. I'm tempted to do that again, however counterintuitive warm soup is.

I don't mind cold food for lunch, but I really want a hot meal for dinner.
Roast chicken etc tonight, probably lamb bhuna tomorrow.
I've always got several here'soneIpreparedearlier in the freezer for when I CBA to cook.

A bit boring maybe. Exactly the same things we eat during the rest of the year.

Salads mostly. With maybe something like salmon, or a quiche. We tend to eat like that in the summer anyway. Yesterday was pork spare ribs with salad, today it is lamb kebabs with salad. Tomorrow is another day.

I did roast chicken legs, prawns in garlic and parsley, new potatoes, tomato/basil/mozzarella salad and Ottolenghi’s feta, couscous, snap pea and pomegranate salad for lunch - ExDH came over for food.

I have a couple more chicken legs which I’ll cook and probably eat with Greek salad and homemade flatbreads, some mince which I’ll do loaded nachos with, and I need to empty the freezer so might slow cook a leg of lamb to have with taboulleh and more flatbreads.
