So far I’ve got the ubiquitous chicken salad with new potatoes and a Gousto recipe for honey and harissa salmon.

Now I’m beginning to struggle, I really don’t want to spend ages in the kitchen.

So what’s everyone else having?

My husband went out earlier and bought stuff for a cheese board and a bbq, so just guess we'll be having those, i buy spaghetti bolognese ready meals every week.

I'll probably do my tomato/asparagus salad - very easy. For one person cook 5-8 asparagus spears (depending on size) and cool down. Chop the asparagus and mix with 2-3 quartered tomatoes (depending on size) big handful of chopped coriander, almost using it like a salad leaf, then make a dressing of one tablespoon lemon juice, 1 tablespoon olive oil and half a teaspoon dried cumin. Mix together and pour over the veg. Amazingly good for so few ingredients!

@ExplodingSmittens - I tried to add a link but there were a lot of TikTok links etc so I didn’t. If you google an Irish Mammy salad it’s fairly self explanatory. I think I’ve also seen it called a 90s salad. It’s basically some sliced ham, lettuce, tomato, potato salad, hard boiled egg, beetroot, coleslaw and bread.

Sounds very similar to the salad my DF used to serve only there would occasionally be a random like cold processed peas…

We have wraps in the fridge with hummus, loads of salad, feta cheese, olives, prawns, chicken, turkey, salmon, sausage rolls, and loads of fruit and yoghurt. NOT cooking!

I love a 90s mum salad! In fact that's what we'll be having for dinner a lot this week as I've stocked up so we have things like cold roast beef, ham, boiled eggs, iceberg lettuce, tomatoes, cucumber, pickled onions, pickled beetroot, various cheeses, coleslaw, baguette and butter. People can have what they like then.

I can't be doing with cooking when it's hot and I'm happy to use it as an excuse to not cook and feel zero guilt about it. Yesterday we had watermelon, mint and feta salad for lunch and smoked salmon and cream cheese bagels for dinner.

I cooked a lot of hard boiled eggs and new potatoes in the air fryer this morning when it was still a bit cooler and put them in the fridge for the next few days. Quiche, new potatoes and salad will definitely feature.

I've also got falafel, those pre cooked packets of quinoa and tinned chickpeas in the cupboard, plus various salad bits and half a block of feta in the fridge so I'll make a salad with that.

Then maybe a tuna, black olive, red onion and sweetcorn cold pasta salad dressed with lemon and olive oil for later in the week.

I've jut had egg salad (boiled egg mashed with cottage cheese, salt and pepper) on a sandwich for lunch and it was lovely. I love hot weather food and agree with a PP when it's colder I crave lasagne, casseroles, risottos and other hot meals but I definitely want colder and fresher food in the summer.
