Quick and filling school day breakfast ideas beyond oats and eggs

We tend to have porridge/oats with a variety of toppings about half the week and some sort of egg based dish the other half. Well, we've run out of oats and the kids have rejoiced that perhaps there'll be something different for breakfast now 😅so thought whilst we wait for the next delivery I'd do some research and see if we can add a little variety.

Any ideas for alternative quick and easy/preparable in advance, family friendly, school day breakfast ideas please?

We love to get elaborate on weekends... shashuka, pancakes, smoothies, tear and share breakfast loaves etc but on school days I want something either ready to go or that I can leave cooking whilst we're getting ready.

We've tried cereal in the past and find it doesn't keep hunger at bay as long as our usual breakfast, so keen to avoid that.

Baked oats - like cake for breakfast. I bake 100g oats, 300g greek yogurt, 4 eggs, 1 tsp baking powder, 2 tsp brown sugar, 2 tsp cinnamon. Mix together and add apples and berries. I bake in a lined loaf tin at 180 for 25 ISH minutes

DD has a fish finger sandwhich every school morning!

I make a replica of a hash type thing we had in a hotel once.
Diced parboiled potatoes or just sliced if they’re new potatoes, chopped peppers, onions and tomatoes fried until the potatoes are crispy.
I cook loads and freeze it in a big zip lock bag.
We either eat it in its own or have it with crispy bacon or pork mince seasoned with sage and nutmeg or with scrambled egg mixed in or a fried egg on top or we use it in a breakfast burrito.
My kids like sriracha with theirs.

Toast, and peanut butter. Sliced banana on the top.

@FallenNightit's a doubled version of Lindsay Watson's Baked apple cinnamon for which I'll find a link

Thanks @tichter that would be great, I promised the kids we could do some baking tonight. This would be great, looks like it also might be good for school snacks. Though I keep getting in trouble for sending them in with cake. I maintain that if its home made cake its better than all the supposed healthy processed snacks others take in.

My doubled recipe might take slightly longer than 25 mins. I'm not very accurate with oven temps so could have been at 190 but I put it in a loaf tin rather than Lindsay's more shallow pan.

miraculously, I found the energy to bake a banana loaf last night before bed and was beyond chuffed this morning because everyone just cut themselves a slab and helped themselves to fruit. Easiest breakfast ever

FallenNight · 17/04/2026 11:44

I'd be tempted to do it in a brownie pan to make squares I think. We had banana bread for breakfast this morning as well @puppyparent from the freezer!

For the Lindsay Watson 500 cal version he says 34g protein and high in fibre. I had it cold for breakfast this morning and I'm stuffed
