Has anybody got any recipes for wild garlic?

Pleeease, do not say pesto. Surely there must be something else!

I'm not sure what you mean by "wild garlic", surely not this? I thought it was a weed, I didn't know you could cook with it !

I use it as I would use chives, so eg in potato salad. Or in a salad, even on a sandwich. I've never really used recipes for it, just stuck it in whatever im making. I prefer it uncooked.

There's a frittata recipe in the Guardian this week. It says nettles but suggests it's good with wild garlic too.

I was in Austria last week and wild garlic was in everything.
I had 2 different versions of wild garlic soup.

Years ago I got written permission to pick wild garlic from a local park. I lovingly picked it, washed it and looked up recipes. Majority said to add regular garlic because the flavour is SO mild, it need additional flavour! 🙄

Maybe in a soup or fried along with other greens?

FWIW, I've never bothered picking it again.

You can make soup with it . Add to homemade bread / flatbread / scones .
Add to salads , add to cheese toastie or omelettes .

I chop it and add it to salad amongst other leaves; chop it as a garnish for pretty much anything; add it to sandwiches (eg, with brie); use it in pasta...it's very versatile - I use it a lot!

Small leaves in a salad. Chopped use instead of chives. Great in an omelette. Scattered over fish.

Don't take too much wild garlic. It gets wildly overpicked near me. I'm surprised papers like the Guardian promote recipes with it.

Chopped into a risotto or frittata

In cheese scones or cheese muffins - just add chopped to the dough/batter

I do love wild garlic pesto though - a thin layer spread on toasted sourdough topped with a heap of scrambled eggs is an incredible spring brunch 👌🏻

Garlic butter! Put it in ice cube trays in the freezer and put on steak / mushrooms etc when needed

It goes in everything here, currently munching it in a cauliflower broccoli cheese, also love in omelettes, soup, anything cooked with a sauce. In butter and frozen to add to meat. Love the leaves and stems in salad.

Soup? Nettle and Wild garlic soup is delicious and packed with nutrients (loads of recipes online).

I’ve also adapted leek and potato soup to make wild garlic and potato.

Wild garlic butter.

Focaccia.

Wild garlic oil.

Wild garlic salt.

Fermented Wild garlic.

You can also pickle the buds.

It loses intensity when cooked but wild garlic soup is amazing.

I also use it in pasta with cream cheese, creamy mushrooms on toast and wrapped around salmon or chicken.

I made these tattie scones yesterday, and today chopped some into an omelette. My usual go to is wild garlic and cheese scones, they go lovely and green if you put a lot in. DD has hung a bunch in the kitchen to dry and plans to crumble it into things. I also saw a recipe for wild garlic salt that I fancy trying, just blend it up with rock salt and then dry in the oven. I planted some in my garden this year because we love it…
