Has anybody got any recipes for wild garlic?

Pleeease, do not say pesto. Surely there must be something else!

Dd has been dehydrating it and crushing it to a powder for her spice drawer.
It’s very strong when concentrated in that way.

Personally, anything growing wild that can be pished on by the local wildlife won't be getting cooked by me!

All vegetables grown outside get pished on by wildlife. Wild garlic, like any other vegetable, gets washed before use.

Sounds interesting. How does she do this?

Turn it into wild garlic butter or pesto. Delicious

I think you might have missed the bit where the OP asked you not to say pesto!

My son’s forest school made garlic bread by crushing it into butter and spreading it on finger rolls, wrapping them in foil and cooking them on an open fire, which I realise makes me sound as middle class as you could possibly be. They were lovely.

Use it where you would chives. I will be having it in my scrambled eggs tomorrow.

Just be careful.
Lots of poisonous doubles out there

@RampantIvy we have a big dehydrator mainly for figs and winter apple slices so she’s commandeered that.

Neither of those things grow wild in the UK or Ireland, and neither smells of garlic.

Matt Tebbett made scones with wild garlic butter on Saturday Kitchen today
It's nice wilted in a sauce (like spinach)
Loads of ideas here https://www.deliciousmagazine.co.uk/collections/wild-garlic-recipes/

If you pick the larger leaves I recommend you remove the central vein, otherwise it can get stringy

weebarra · 25/04/2026 13:43

Goats cheese and wg scones, risotto, chicken Kiev, soup

Thank you all for the thread and the suggestions. I planted some wild garlic at the bottom of the garden years ago and have never quite worked out what to do with it. I've just made potato cakes (tattie scones) and eaten one - luvverly. I'll put some w g in a salad with tonight's steak as well. And am pondering cheese scones.

It grows copiously in our garden but I've never been able to get excited about using it in the kitchen. I might try this though, sounds interesting.

Asparagus & wild garlic soup.
Also you can blanche and freeze for later on in the year.

Well many of the vegetables you buy also grow on fields with wildlife 🤔
