I'm new to sour dough baking. My 2nd loaf is proving on the bench ready for its 2nd stretch and fold.

I over proofed my first slightly but it still tatsed great

Knocking about here in the hope of some sourdough chat and tip sharing 😀

My latest batch of rolls are cooling on the rack at the moment. A sliced sourdough roll with almond butter & cheddar, grilled for a couple of minutes, is delicious.

I want to make rolls (I'm Northern, they're buns to me 🤣)

Never even crossed my mind to buy a recipe book, I've been on sourdough tiktok. I have a feeling that book may fall into my basket though!

Also - I just heard a commotion in the kitchen. My sour dough starter (half a jar - I've just used some and not fed it) had popped the lid off its jar!!

Does that mean it's gone bad? Hope not!

If it does, I use the white seeded wedge rolls recipe on page 134! (Although I use wholemeal flours instead of white ones, add extra water to compensate & usually skip the seeds.)

Ooh how funny, DH was saying this morning that it would be easier to make rolls. I usually make 2 loaves at a time and freeze one, but we could take rolls out as we need them.

My dh rolls his eyes (then ate all the sourdough loaf) saying we could buy one.

I'm trying to steer away from ultra processed foods though and I'm thoroughly enjoying my sourdough research.

I nurtured my starter like a tamagochi!

If the lid popped off you’ve got a gassy girl!! How’s the starter looking? My husband gets creeped out when I show him mine when it’s moving 😂 loves the loaves though!

I love making it and probably do 2 half loaves a week, I just started making discard things too like sandwich bread, pretzels, cookies, bread rolls etc. It’s like a never ending carb cheat code!

Exactly! I usually freeze all my rolls & take them out to defrost overnight as needed.

She's bubbling away! Not fed it for a couple of days. Fed it this morning used it an hour ago and it popped off just now! I've googled and it says it means it's very active?!

I made discard crackers (mustard, cheese, onion powder and salt and pepper. Spread very thinly on a baking sheet. Baked for 7 .minutes, scored then baked again for 7 minutes. DS ate the lot!

Planning on discard pretzels next

Gorgeous! Do you bake these in a Dutch oven or just on a baking tray?

Just on a high sided baking tray, & the recipe’s been foolproof so far!

Mine is called Fred. I don't know if I do it exactly as supposed to as I just experimented and it came out amazingly well! I surprised myself. It's pretty light, with holes and a nice crust and tastes great.

I literally just stick it in the bread machine, then pour it into some greaseproof in a bowl and cover, refrigerate overnight and cook in a Dutch Oven and its done. I haven't bothered trying any other way because its so nice! Just doesn't have the aesthetic look of traditional sourdough but I am really not bothered about that. It looks kind of rustic. I rarely buy bread anymore. May have a go at some rolls though.

I honestly don’t think there’s a right way or a wrong way as long as you end up with something you enjoy eating!

@EmpressaurusKitty and the more you make them you get to know what to do I suppose, and things always turn out differently each time don’t they ? they really do look beautiful, there is a bakery locally that charges £6 for a sourdough loaf, do they cost anything like that to make, or I suppose that is a reasonable price given the TLC needed, if you can afford it !

They do! I actually had one loaf some time ago that came out very flat & a bit crunchy so I treated it as a flatbread instead.

Nowhere near £6, each batch of 8 rolls for me takes 300g of wholemeal flour, 200g of wholemeal spelt flour, 50g of starter & some water.
