I'm new to sour dough baking. My 2nd loaf is proving on the bench ready for its 2nd stretch and fold.

I over proofed my first slightly but it still tatsed great

Knocking about here in the hope of some sourdough chat and tip sharing 😀

Have you tried wraps yet using discard? They are a big hit in our house

I use this recipe but sub the butter for just a splash of olive oil (found the butter made them too pastry like)
