Looking forward to seeing some old and new planners.
After two beens of cheese and cake I’m looking forward to some normal food!

Friday: lemon asparagus risotto
Saturday: mushroom & goat cheese tart
Sunday: Tofu Rogan Josh
Monday: Pesto beans on sourdough
Tuesday: peanut noodles
Wednesday: harissa tofu
Thursday: pasta e fagioli

I'm feeling a bit run down at the moment so I want comfort food and my plan is:

Sunday: lentil soup
Monday: creamy tofu and greens pasta
Tuesday: halloumi bake
Wednesday: tofu stir-fry
Thursday: Italian wedding soup
Friday: pizza
Saturday: boursin orzo with turkey escalopes

I had confit duck and my last oven fries on Friday as I was so late home. I swapped the order so had feta chicken burger last night and feta roasted chick with led veg and parmentier potatoes tonight.

I am now out for 3 nights running. I may need sustenance when I get home (I bought fresh oven chips and have 1 serving of chicken tenders if needed).

I need dinner Thursday …possibly lamb chop or steak…my 3 portions of duck got stuck together when I froze them… 😤 or a fish pie or pasta bake….or go shopping.

Friday I now fly home, until Sunday night …when crackers and cheese should be enough. Then either a shop bought lasagna ( I’ll freeze if uneaten) or one of my ready meals (I have 2 curry options or chick/mushrooms with white wine sauce or 1 more fish pie from freezer; or a pasta carbonara type dish from fridge) on Monday.

Then I’m away for a week, back Tuesday for 1 night )so similar freezer dinner) then home for a fortnight for Easter.

Trying to get smart on timings as between longer days at work a few times a week and DC activities, I am struggling to sort things so that we don't eat ridiculously late every night.

So, to that end:
WFH today so a bit more flex - home made fish cakes, slaw and fries for those who want them.
Tomorrow WFH but endless lift cllubs - Baked chicken and mashed potato with veg
Wed late back from city: quick pine nut, pancetta and cabbage pasta
Thursday - out for dinner with MIL
Friday - home made "pizza" if I have time, or I'll buy some at the waitrose next to DD's dance school!

Sun - beef casserole (to sue up some of that root veg!)

I had lamb chop with cauliflower cheese and parmentier-style diced potatoes last night.

Tonight will probably be a takeaway.

And DH will have some kind of plan for Saturday.
Sunday will involve bacon lardons, chestnut mushrooms, cream/eggs for sauce and pasta.

Monday will be something using 2 peppers, half a tub of cherry tomatoes, a carrot, sugar snap peas, maybe eggs, maybe lardons….im talking myself into a Spanish omelette (and leftovers for Tuesday breakfast) to empty the fridge.
Tuesday to Monday I am travelling.
Tuesday 31st will definitely be a freezer night (I have a nice pasta bake, a fish pie, lamb chop or steak with cauliflower cheese, chicken and mushrooms in creamy wine sauce with rice/pasta or 1 chicken curry portion).
Then I am travelling again as I go home for 2 weeks so Wednesday probably takeaway due to late flight and then see what DH has in cupboards/fridge when I get home and do a proper food shop.

Complete disaster as longer days at work turned into mammoth days! I think it will be better in the next few weeks btu I am definitely going to have to prioritise the super quick, super easy, even if expensive options. I've see a lot of meals like steak and potatoes or air fried fish with microwave rice and pre-cut stir fry in our future. Sigh.

Tuesday: Bacon and cabbage pasta
Wed: Pork tacos
Thursday: Steak, chips, salad

Quite boring but easy. Tacos are already made in freezer so it's just the quick salsa and heating the tacos. Thursday it's 15 minutes from walking through door to eating!

Need to get back to my meal planning as I've been overspending! Quite a heavy/not very healthy week as I have some guests staying for 10 days and I'm a feeder.

Tonight - Piri piri chicken and halloumi sliders, homemade crinkle cut fries, ranch slaw, corn on the cob and salad.
Tomorrow - Chinese chicken curry with gammon and egg fried rice, prawn crackers and wok fried greens.
Saturday - Traybake adana kebabs with flatbreads, tzatziki, chilli sauce, roasted veggies and a couple of salads
Sunday - Giant Yorkshire puddings filled with slow cooked beef stew, topped with mash and a side of assorted green veg.
Monday- Chicken Laksa
Tuesday - Last night with guests so we'll be going out to a local Curry house.
Wednesday - Something really easy, maybe a tuna jacket potato and salad or just soup and a toastie.

M: filled pasta with a sauce to be decided
T: Nepalese takeaway for my birthday
W: pie for him, fish for me, chips, mushy peas. I haven't decided between salmon or sea bass, and his pie is freezer surprise.
T: butter halloumi curry, home made flatbread

A very low effort week, but hey ho.

A mixture of having to travel to stay with my mum after a medical emergency, and then working late to make up for the time away, means I haven't been on this thread for almost three weeks. Back to meal planning now though and my week is looking like:

Today: Fasolakia
Tomorrow: Veggie chilli
Wednesday: Greek-style roasted veg and feta orzo
Thursday: Chicken and veg stir-fry with noodles
Friday: Breaded fish, wedges, broccoli and peas
Saturday: Spiced yogurt-marinated leg of lamb with rice and saag.
Sunday: Dinner at MiL's (probably a Chinese takeaway as she has this every Sunday - no idea if Easter will be an exception, hence doing our twist on an easter dinner the night before).

I have been off the thread for a while. Wasn’t up to doing much since Christmas while waiting for surgery but I’m 2 weeks post-op now and able to potter around the kitchen.
DH has kept us fed, albeit in a random fashion 😄, but I’m looking forward to working my way through the freezer now and getting back to cooking from scratch.

Today: Turkey fajita casserole (plus one for freezer) and sweet potatoes
Tuesday: Lamb curry, vegetable rice
Wednesday: Sausages and something (maybe toad in the hole)
Thursday: Scallops in sundried tomato, mushroom, and creme fraiche sauce
Friday: Roast lamb dinner
Saturday: Leftovers from Friday
Sunday: Freezer meal, possibly the fajita casserole so it doesn’t lurk in there for months!
All above with various frozen beg as freezer is jam packed.

We have finally got an air fryer, so need to get the hang of that. DH very excited by thought of more chips 😆

The thing I live my air fryer for most is cooking fish. Add marinade, crumbs etc and air fry for 9 minutes with no mess or making the kitchen smell fishy.

S: flageolet stew with cod and gremolata
S: Easter eggs, tarragon celeriac remoulade with green olive bunnies, asparagus in Parma ham, slow roast lamb, green beans, broccoli, dauphinoise potatoes. green salad, cheese, lemon posset with shortbread.

Doing some earlier-than usual planning, for next week. The weekend remains as originally posted:

Saturday: Spiced yogurt-marinated leg of lamb with rice and saag.
Sunday: Dinner at MiL's
Then
Monday: Something with the leftover lamb - probably in a pitta with salad.
Tuesday: Tortellini with pesto and salad
Wednesday: Out for a friend's birthday. DH home alone and will fend for himself.
Thursday: Veggie chilli (had planned this for this current week but forgot that DH had a work event so bounced the chilli and took the opportunity to cook salmon - which he hates - last night for DS and me)
Friday: Chicken, fennel and butterbean stew
Saturday: Hoisin chicken and rice one-pot
Sunday: Sausage and rosemary risotto

Just finished this week's plan, super annoyed as I thought I'd skipped an Odd box and had already ordered my weekly shop so will likely have a lot of random veg to try and use up! I also have so much chicken in the freezer so it's a bit chicken heavy!

Thursday - Ziti lunghi Bolognese bake, salad and garlic bread. I've been craving it after seeing a Tiktok.
Friday- Thai red curry chicken noodle soup, packed with as much veg as I can!
Saturday- Chicken shashlik with either lemon and coriander rice or flatbreads, raita and kachumber and maybe some mini poppadoms for crunch.
Sunday- Gammon, cauliflower cheese with leeks, new potatoes and sautéed greens.
Monday- Chicken, leek and spring green risotto.
Tuesday - Tuna crunch baguette with lots of salad, pickles etc (too busy for cooking)
Wednesday - Chicken Caesar pasta salad with kale and I'll make a soup with whatever veg I have leftover although it's not really soup weather atm!

Also have a load of mushrooms I need to use up so will probably have to make a mushroom soup for lunches or have mushrooms on toast/omelette for breakfast.

@HalloumiFries hope your mum is okay!

@DameProfessorIDareSay My air fryer isn't massive so we don't tend to use it for main meals. I mostly find it useful for staffered cooking. Things like fish cakes cooked as and when people come in with side dishes pre-made and left on the stove or quick meals for DD who is irritatingly fussy. Also jacket potatoes and, for DD, chicken thighs marinated as usual then cooked in air fryer for about 25 minutes.

I'm back to being bored of cooking. So easy, no fuss, popular choices here:

Spag bol
Sweet and sour chicken and rice
Chicken burrito bowls
Pasta with some kind of sausage sauce.
Jacket potatoes with tuna and salad

Thursday: Prawn tikka masala
Friday: HM spag Bol
Saturday: sweet chilli glazed chicken, roasted carrots, oven chips
Sunday: slow roasted lamb, roasted roots (parsnip, carrots, sweet potato with a mandarin, balsamic and honey glaze), roasted potatoes
Monday: Leftover lamb reheated in gravy, mash, baby peas
Tuesday: pepper and chorizo linguine
Wednesday: chicken fajitas with HM guacamole
Thursday: Greek lemon chicken, roasted Mediterranean veggies and HM parmentier potatoes (basically cubes of potato roasted with rosemary and garlic)

Teen dc on Easter break so have allocated cooking duty to them Tuesday & Friday Smile.

Today: Cod, pearl barley & roast veg risotto (is it called risotto if made with pearl barley?)
Tuesday: Cheesy potato & vegetable bake with quorn escalopes
Wed: Prawn & smoked salmon linguine
Thurs: Halloumi, butter bean & veg traybake, salad
Fri: Spicy bean & veg enchiladas, salsa, wedges
