Looking forward to seeing some old and new planners.
After two beens of cheese and cake I’m looking forward to some normal food!

Friday: lemon asparagus risotto
Saturday: mushroom & goat cheese tart
Sunday: Tofu Rogan Josh
Monday: Pesto beans on sourdough
Tuesday: peanut noodles
Wednesday: harissa tofu
Thursday: pasta e fagioli

Days got jumbled, I did carbonara in the end, and delayed the cod and pumpkin to last night. I did a rigatoni with rosemary sausages and courgette dish on Thursday as an experiment (that’s going on my list to repeat!). And the risotto (enough to freeze a second portion - I only need half a cup of rice).

the plan for this week is:
today lamb steak, roasted Mediterranean veggies, roast baby potatoes
tomorrow steak, garlic and thyme mushrooms, parmentier potatoes (HM) or croquettes (frozen)
Mon fish pie (cod, salmon, prawns and peas, potato top) - I have a huge piece of cod so will make 2, 1 to freeze
Tuesday chicken and mushrooms with rice (easy cook after an evening lecture)
Wednesday Gorgonzola pasta
Thursday sweet’n’sour chicken
Friday chicken fajitas w/HM guacamole

I am mostly using up fridge/freezer stocks as I have a lot of evening events in the next 3 weeks so need easy meals, then I am away for a week for work, I have 36 hours back here before I go again for 13 days for Easter, back for 2 days before another 2 day trip. So that weekend (in about 7 weeks?) is when I will restock fridge/freezer and batch cook again. But I also want space to bring back some M&S meals and some good Irish meat for feeezer from home…so I’ve spent some time doing stock lists and planning menus for 3 weeks this morning.

The food shopping this week is: milk, Parmesan, 1 pepper, frozen peas - and nothing else.

Lots of fresh herbs in my shopping this week for my various salads, pestos, dips etc. I think I'm embracing the slight improvement in the weather! Grin

Sunday: Pork mince stir fry with rice/noodles
Monday: Lamb chops, flat bread?, tomato salad, tzatiki
Tuesday: Thai style steak and noodle salad
Wednesday: Roast chicken thighs, mashed potato, green veg
Thursday: Savoy cabbage and pancetta pasta
Friday: Green Gnocchi

I’m all over the place this week so just spent three hours batch cooking various meals - I have concerns there won’t be enough though 😩.

Mon - lasagne (if there’s any left over from tonight…DP didn’t buy as much mince as I needed)
Tuesday - butter chicken
Wednesday - omelette and salad
Thursday - butter chicken (no chance of the kids eat some on Tuesday as well)
Friday - salmon in spinach cream sauce
Saturday - fajitas

Twas a very boozy and indulgent weekend. Working through the freezer so only planned to Thursday.

Tonight: lasagnes
Tuesday: spaghetti carbonara (with bacon for DD and DH and with smoky beans for DS and I)
Wednesday: steak/tofu steak, chips and braised leeks and fennel
Thursday: leftover lasagnes

I’d taken out chicken chunks and roasted veg to do a very easy pasta dinner last night but the lecture ran late and I am now on an airport train for an unexpected trip, so “dinner” was crackers and cheese, carrot sticks and hummus. i can do the chicken tonight instead (I am due home about ten).

@HalloumiFries the curry was a winner, thanks! I actually tweaked it to be a creamier rather than tomato version, and did home made flatbread rather than rice, but we'll definitely be having it again, I'd never thought of using halloumi in a curry .

Dp, an inveterate carnivore, said it was a vegetarian meal he could get behind and swiped the leftovers for lunch.

Excellent! We had it last night too, although I reduced the amount of halloumi and bulked up with chickpeas. We do eat a lot of veggie food midweek and DH normally says that he tolerates much of this but LOVES this recipe. He's always saying that I should make this for our friends, who are vegetarian and love Indian food - but my friend's husband is a real purist about Indian dishes and I think he'd run me out of town if I served him a halloumi curry 😂I also remember this sparking a bit of debate when I posted about this dish on a previous incarnation on one of these threads. Many posters horrified by the mixing of cuisines in this way.

Personally, I think it's an extremely tasty recipe. The halloumi works well - somehow combination with cardamon is particularly good, which I never would have expected, and it's not always easy to find paneer around here anyway.

Plus I'm a massive hypocrite as I also don;t think other types of food mixing. I'm sure gochujang pasta is lovely but it feels very wrong to me.

I don't normally start my plan until Friday morning but partly because I'm procrastinating rather than cleaning the bathroom and partly because I'm aware that next week needs to be one of those more careful weeks, as we're going on holiday next weekend so meals need to be self-contained with no leftovers, my mind is very much on food right now.

Yes, I'm not always keen on cardamom, which is why there is a lot in the cupboard! But it worked in this case. Like your dp, mine isn't always keen on a veggie meal, but this one can stay apparently! Fusion food that worked, I reckon.

I don't think I'm delighted with this, although it makes sense in terms of things to be used up.

Might sleep on it and make some changes.

I haven’t been great this week - I just realised I defrosted a steak last night (for tonight) and I am 150 km away at an event so eating out…I guess it’s steak for tomorrow so!

Doesn't feel like our healthiest/lightest weak, it has to be said. But I've got quite a hectic work week and am a bit bored of meal planning and prep!

Yesterday was impromptu stew and dumplings to use up the sad looking root veg in the fridge. Bloody excellent it was.

I too have root veg that needs using! I’ve done a sausage casserole for tonight but must do something else with it at the weekend.

We’re also having:
Halloumi and marinated butter beans tomorrow
Jacket potatoes Thursday (with tuna and salad)
Prawn pasta Friday
Steak Saturday.

I’m having a delicate tummy few days, so only had half my steak on Sunday, made Gorgonzola pasta Monday and Greek chicken with veggies last night but only had half of both.

tonight is a fish pie and sugar snap peas

tomorrow I am out for an event.
Friday I plan a pizza (I have fennel salami to use).
saturday possibly feta chicken and veggies
Sunday a chicken and feta burger with salad
Monday out again
Tuesday out

It’s a seasonal thing here - and at the end of next week, that season ends but I also have to go home for the weekend and then long haul trip on Tuesday week…with 1 night here before going home for Easter so I will be wiped by the time Easter comes. And I need to empty out fridge by then too…at least of perishables.
