Can anyone suggest recipes for thin pork steaks ?

I'm not keen on sweet /sour flavours or soy sauce .
In always struggle to make this type of pork tender and not dry.

We eat them quite often, and swap out with veal or turkey steaks too, depending on offers. I just cover them in breadcrumbs, which keeps them moist, pan fry. Pop a fried egg in top, and serve with wilted spinach cooked in olive oil and garlic.

Simple healthy food.

If you don't want any added flavours, just flour, egg & breadcrumbs before frying briefly will keep them moist.

Brine them before cooking.
And/or cook in an air fryer.

Hammer them even thinner with a rolling pin. Seasoned flour (we use salt, pepper, paprika and oregano), egg, breadcrumbs and then pan fry just for 2 mins or so each side.

Chop up, fry with leeks, add some chopped apple and sage. Bake in the oven for 30 mins. Serve with cous cous or rice or mash or crusty bread.

Fry briefly, then finish cooking in a creamy mustard sauce. Serve with mash, rice or tagliatelle.

How about making them even thinner then stuffing and rolling. Keep in place with cocktail sticks and roast.

Pork slices
apple suce
stuffing mix
potatoes
oil

Make up the stuffing
Put a little oil in the bottom of an oven proof dish.
Slice the potatoes thinly and put in the dish, give them a bit of a toss in the oil then season with salt and pepper.
Put the pork on top of the potatoes
Spread the pork with the apple sauce
Spread the stuffing on top of the apple sauce
Bake for 20-30 mins.

You could probably take out the apple sauce and maybe use Dijon mustard but I have not done that myself.

I don’t bother with the flour, just egg and breadcrumbs with some herbs/seasonings in the breadcrumbs. Make sure they are dry before dipping in the egg.

Wow ,you guys are on FIRE .And at this time on a Monday morning !
I've just checked back ,expecting nothing and there's a host of suggestions .
This is fabulous ,I'm going to be able to revamp my rotation of meals .
Yes I'm ok with apple sauce @sashh .

I do this but I make a onion sauce sometimes just to switch it up,

Op i fry my pork in a cold pan and l let it rest afew minutes and it isnt dry.

Chop up the pork, brown them in a pan and then remove, add onions and garlic, stock cube, creme fresh, add pork and cheese.

Make pork and mushroom stroganoff, with finely diced onions fried gently until transparent but not browned, add the pork cut into strips, and the mushrooms sliced, also some garlic, a good splash of white wine, herbs if liked, let it bubble and reduce, then finish with some cream or creme fraiche. Serve with mash, rice or tagliatelle.

Schnitzel - trim off any fat, bash them with a meat hammer to tenderise (a rolling pin or similar would suffice) season well then dip in flour, followed by beaten egg with a splash of milk, then breadcrumbs. Fry for a couple of mins each side and serve with whatever you fancy - chips, salad, potato salad etc.

Otherwise find a recipe for a creamy mustard sauce/mushroom sauce/white wine sauce and do that with mash.

I would probably make schnitzel and serve it with red cabbage and some sort of potato
otherwise I would do a katzu curry with them
