Can anyone suggest recipes for thin pork steaks ?

I'm not keen on sweet /sour flavours or soy sauce .
In always struggle to make this type of pork tender and not dry.

i never think of doing a pork stroganoff
i tend to do mushroom
or if reduced, then beef due to the expense but pork sounds tasty

We've just eaten the stroganoff with 3 mustards
I used tagliatelle as we've had a lot of rice recently.
It was v tasty!!
Going to try the schnitzel approach next time.
