What recipe made me buy jarred roasted red peppers?

I saw a recipe that I wanted to try; it probably had beans of some sort in it and I think maybe feta cheese. It definitely had roasted red peppers in it and I bought a jar of them.

I now can’t find the recipe!

Any ideas please?

I doubt this is what you saw but I like to whizz up roasted peppers and feta and a splash of olive oil to make a delicious dip.

I use them all the time. I put them in salads, on roasted vegetable tarts, in ratatouille, on a ciabatta with feta or goat’s cheese, or whenever I need a red pepper and I’m out of fresh.

I also had a salad once that was roasted peppers, feta and almond. It was delicious.

I do a jarred red pepper, marscapone, chilli, garlic etc pasta dish from Esther clark - you could easily swap out the pasta for Bold Bean Co beans. You basically blitz the sauce heat and throw in the pasta

So I will often blitz them into pasta sauces- sometimes make a nomato sauce which uses these.... I make a joke wicks 15 minute romesco pasta....
I chuck them on salads, and often chuck them into lentil dishes (hubby hates veg, and it's an easy way to get extra in without him noticing....)

Oooh... if you can;t figure it out I highly recommend getting a tub of decent quality hummus (the Sabra brand is best IMO), putting that and the red peppers, a handful of cashews into a blender, adding a little bit of water and lemon juice and perhaps a tablespoon if tahini and blending until smooth.

Thank you all so much. I’m definitely going to try the salmon dish and the Green Roasting tin recipe this week and add a bookmark for trying the others too.
I have almonds and feta so it would be rude to not try Nigella’s one too 😁

I would say the sauce serves four, though, and I halve the amount of chilli flakes (I think they must be hotter when blended as I’m not usually a wuss with heat).

I regularly do chicken breasts stuffed with Jarred Red pepper, feta and tomato pesto. Recipe is originally from the Fast 800 Keto book, but we loved it so much that it became part of our usual week day repertoire. It’s so easy and quick. Also, makes me feel virtuous. Can’t help with the beans though…
