James Martin’s Dark Chocolate Brownies. I make them regularly and anyone who tries them says they are the best brownies they have ever had. Just make sure you don’t overcook them.

This is my brownie recipe. I add a whole bar of dark cooking choc (so 150g) but everything else is the same. Large eggs work best. Don’t cook them as long as you think you should. They should be quite gooey. They harden up more as they cool. I sell them in my cafe and they’re v popular.

I made some for the school summer fair (left the nuts out), and decorated with gold food spray. The teachers nicked them, obviously thought they were too good for the kids!

My go-to recipe is the Hummingbird one but I reduce the sugar because they're far too sweet if you use the full amount of sugar that the recipe calls for.

This is the best recipe I've ever used for chocolate brownies by the late great Bill Granger. I don't use chopped chocolate in it, and have made it with frozen raspberries or cherries which makes it taste almost alcoholic.
I also make it dairy free but yet to make it gluten free, but I'm sure it will be fine. I also make it cocoa free as my youngest has a cocoa allergy

Which chocolate do you use? I use 80% cocoa chocolate (lidl) which is quite bitter, so I find this balances out the sweetness perfectly

I always use dark Chocolat Menier. It's pricey, but worth it.
