Macaroni cheese topping?

I am going to be making a macaroni cheese on sunday.

Want to make a lovely crisp topping. So I will cook it in the oven and then put it under the grill for the last few minutes.

What cheeses go well with this?

I’d do cheddar with breadcrumbs - not too much cheese or it’ll go oily.

You could use a mix of mozzarella and cheddar for some stringyness.

Adding chopped bacon and courgette to the macaroni makes it totally delicious.

We add marmite to the cheese sauce then make a topping with breadcrumbs (or Herby breadcrumbs) and parmesan, then drizzle with some more marmite mixed with some hot water.

Buy some panko breadcrumbs, whizz them up in a food processor and add a chunk of parmesan or pecorino, a good glug of olive oil, salt, pepper and whatever herbs or spices you like and add that on top.

Best topping I have had with mac and cheese was extra melted cheese and smokey pulled pork with crispy onions. It was incredible. No good if you're veggie though of course but it was very yummy!

My sister does the most amazing Mac and cheese, I'm not a huge lover of it usually and never ever make it myself but I adore hers. It's definitely not UPF friendly but it's so delicious.

She won't give me her recipe but has confirmed she uses at least one of those 4 cheese mix bags, hot paprika (NOT sweet), crispy onions (the shop bought kind), crispy bacon, dijon mustard, diced jalapenos and chives.

I strongly suspect the topping is crushed up wotsits/Cheetos plus crushed up mini cheddars but she will neither confirm or deny annoyingly!

Cut thin slices of stale baguette and cook in the oven for about five minutes. Then when it's cool put in a bag and smash with rolling pin.
That makes a really nice topping and then a bit of parmesan and parsley mixed in and grilled?

I add bacon lardons, a mixture of mozzarella and cheddar and brown breadcrumbs. Makes a lovely tasty topping.

You'll have done it by now, but I do mature cheddar mixed with bread crumbs and chopped flat leaf parsley. I put some chipotle chilli and garlic powder in the cheese sauce. They ramp up the cheese sauce. I have an american recipe which uses mix of mature cheddar and Monterey Jack. It is delicious.

I do like crispy fried onions but you don't need them in a properly cheese macaroni cheese.
