I ordered some tinned new potatoes by mistake! Does anyone have a recipe for Spanish omelette that uses them? Or any other ways I can use them up?

Tinned potatoes are great in curry as they keep their form really well and dont just turn into mash

I love tinned potatoes! I heat them up in the microwave and cover them in salad cream!

Literally slice up the tinned potatoes, loosen the Boursin with a little milk so it’s about the consistency of double cream, layer half the potatoes then half the Boursin then the rest of the potatoes and then rest of the Boursin. Top with grated cheddar and whack it in the oven. It’s really quick and easy. If you want it less garlicky do half Boursin half Philadelphia

That sounds delicious Era but DH doesn’t like blue cheese or flavoured cheese 🤦‍♀️
