Tinned potatoes

I ordered some tinned new potatoes by mistake! Does anyone have a recipe for Spanish omelette that uses them? Or any other ways I can use them up?

Used them with tinned fish in the past to make fishcakes. Store cupboard backup and worked well.

Wash to get the taste of tin off them and dry.

Slice. Fry with a sliced onion. Add paprika and oregano. Add spinach. Add eggs for a Spanish omelette type thing. I like to add those tiny jarred sweetie drop peppers too.

Or we roast or air fry them with oregano and paprika. For me, the paprika is what makes them taste good.

To make spanish tortilla de patata with tinned potatoes ,
In a little oil cook very thinly sliced onion , add the potatoes thinly sliced, mix carefully with the onions so they don' t break up too much.
Continue cooking onions and potatoes until onion is transparent and potatoes heated through and softened ,season with salt
In a bowl beat the eggs without too much air, add a tiny pinch of salt for each egg, add the slightly cooled potatoes and onion mixture, mix with eggs and let stand for a few minutes , (not too long as mixture can turn greyish)
Put a few drops of oil in a non stick frying pan (if you have oil from cooking the onions and potatoes use this ) when warm add the eggs potato mixture, shake the pan a bit to settle the mixture, cook over a medium heat until bottom has set.
Place a dish over pan and carefully flip the tortilla, add a few drops of oil to the pan and set back on heat, carefully slide the tortilla back into the pan to finish cooking , run your fish slide or spatula around the edges to round off nicely

I sometimes use them to make a hotpot style topping for a cottage pie instead of mash. Wash, pat dry and slice to about the thickness of a £1 coin and lay on top of the mince mixture - you can usually overlap them if it is a dish for 4. Top with a little grated cheese and breadcrumbs and bake as usual.

I always have bolognese in the freezer so it is my instant meal - I can slice the spuds and grate the cheese whilst the mince is defrosting in the microwave.

Really highly rated and always full told me they always use tinned potatoes for their bombay potatoes after I asked how they get them so perfect and not fall apart.

And their bombay potatoes are delicious.

That is really interesting Ive often wondered how they are so firm and waxy

Literally slice up the tinned potatoes, loosen the Boursin with a little milk so it’s about the consistency of double cream, layer half the potatoes then half the Boursin then the rest of the potatoes and then rest of the Boursin. Top with grated cheddar and whack it in the oven. It’s really quick and easy. If you want it less garlicky do half Boursin half Philadelphia

ideal for camping holidays, more versatile than people think as you can fry them, boil them, roast them all sorts, handy to keep in cupboard for short of food/money times, kids like them

They tend to spit if you fry them. I used to cook them a little before doingthat or use them in a salad.
