Vegetarian recipe that isn't lasagne, quiche or one pot. Needs to be relatively child friendly and ok for me (low carb and gluten free) but I can make do if I need to. Any ideas for an evening meal. Thanks!

Look on the low carb bootcamp threads. Millions (hyperbole) of veggie ideas. Veggie low carb is harder but not approaching impossible.

This chilli is really nice and works well as an enchilada filling as well as with rice or a baked potato.

Whats the definition of child friendly food?

Dhals and lentil curries, tofu stir fries or curries if you get a plain flavour one

Stuffed mushrooms with lots of cheese and onion

Omelette

Things on toast like mushrooms, tomatoes, cheese, beans.

Bean or lentil soups, cauliflower cheese

Aubergine Italian or our version of cauliflower cheese (included carrots and potatoes, with any root veg to hand), shepherd's pie made with brown lentils instead of meat, pasta with leeks and creme fresh.

The list really is long. A lot of Indian food (Dahl, samosas ((especially made with courgettes)) are vegetarian.

Aubergine parmigiana with lentils and other veg in the tomato sauce (if your child will eat aubergines) - make a massive batch and freeze portions for midweek meals. Kids like with garlic bread.

Quorn spag bol

Daal and curries (not sure if this conflicts with the one pot requirement!).

Burrito bowl - search Gousto for the recipe.

Search bonfire pie on the Guardian website - add feta and beans/pulses of your choice.

Things I've had this week (DH is veggie and low carb):

Soy mince version of this https://www.bbcgoodfood.com/recipes/moussaka but left out the potatoes. It was great. Clearspring make good soya mince and chunks.

This: https://ottolenghi.co.uk/pages/recipes/pilpelchuma-chicken-thighs-soured-cream-pickles but DH had paneer not chicken. We missed out the pickles and added lettuce, tomato and cucumber. I also made these to have it on: https://www.dovesfarm.co.uk/recipes/farinata-flatbread (meal took about 25 mins to make).

The easiest thing is to just search on Instagram - HealthyGirlKitchen is a good account. She's vegan and has a small child.

Lentil croquettes - tin green lentils (Aldi, 49p) mashed up, add finely chopped onion, grated carrot, chopped up mushrooms,garlic that have been cooked until soft. Add some grated cheese if you fancy. Add seasoning to taste, mix in beaten egg. Shape into little croquettes & brown in bit of hot oil then finish off in over or air fryer.

Can make similar with tin of chickpeas mashed up or red lentils cooked into a stiff puree. I usually cook this in a loaf tin and slice it up rather than make into croquettes.

This is so good and carb free. I just use ordinary mozzarella though. Not smoked.

I'm going to second the comment about Hodmedods. The products are fantastic and the recommended recipes often really interesting and tasty.
When it's in season I really recommend their 'pea flour' and often make savoury pancakes using a mix of this and ground almonds, or high protein dumplings using this 'flour' mix and ricotta.
Also have a look at the Anna Jones website for easy child friendly veggie recipes.
I buy pasta from The Northern Pasta Company. It's made with spelt so low gluten and delicious.
