I thought this might be an interesting idea for a thread
We can ask for suggestions on something to cook with an ingredient that is lurking in the cupboard, the freezer, needs using up or bought by mistake

Roast the squash and then mash it into a light on the cheese sauce for pasta - drops the calories and tastes lovely

Roast with a load of other veggies and towards the end top with feta cheese or grated cheddar

This veggie risotto is lovely and includes squash.

Christmas pudding I could eat any day of the week wir custard or a sweet white sauce. Any leftovers I'd curmble into melted butter, warm through and serve over vanilla ice cream

Oh and I've got a big bag of kidney beans in the freezer. What can I use them in apart from chilli?

For the squash, Mary Berry's butternut squash lasagne. It's delicious. I leave out the mushrooms.

Sorry for the Daily Fail link but other ones that came up when I googled weren't the one I use!

Use the dill for a marinade/sauce with lemon zest and white wine for white fish. You could add a splash of cream or creme fresh at the end.

I've bean making these carrot, cumin and kidney beans burgers for years. I tend to use red onion and also add in a red pepper and some nigella seeds. Personally I find them a bit soft for regular burger buns so usually just have them as they are or in toasted pita.

Roast the butternut squash with a little oil, ground cumin, salt and pepper and a sprinkling of rosemary. Once cooked cover with crumbled feta cheese and pomegranate.

@Hoppingabout mackeral pate is a Great idea. I used to make it with horseradish but couldn’t persuade my kids; the kids love mackeral and dill so I think they’d try this
