Christmas Mincemeat - what to do with a large jar

I bought a large jar of Christmas mincemeat and am looking for ideas of what to make with it - but not the obvious pies.

I made Mary Berry’s mincemeat loaves and they turned out dry and a bit crumbly, although they tasted nice. I’m thinking of a loaf, cake or crumble as opposed to anything else sickly sweet like rocky road etc.

can’t help but following with interest as in same boat. Tempted to try Fanny Cradock’s infamous omelette, but suspect the family would leave home and I am quite fond of them all.

It goes quite nicely in a bakewell type thing - put the mincemeat in place of the jam between the pastry and the almond topping. Either that or put a layer of pastry on a tray, top with the mincemeat, then put on a layer of crumble topping.

Make ice cream by whipping double cream and condensed milk together. Fold in mincemeat and freeze.

I've made mincemeat scones before, I think it might have been a Trust recipe.

I don't know if the fb link will work, but if not it's a a nice recipe I tried - "stollen bites". I doubled the recipe and used a full jar of mincemeat.

Edit - apologies, that's the wrong recipe! That's the one I used to use up my left over marzipan Blush I'll try and find mincemeat one...

I havent made any myself yet but was googling for this before xmas to see what interesting stuff I could find. Some of the recipes call for mince pies, but some just call for the mincemeat, some are blondies where you just swirl it in and some are brownies where it goes into the mix proper

The other thing Ive just thought of is tha tyou could make an approximation of panpepato, or a similar thing, basically spiced fruited 'bread' but its not bread its like a massive solid lump of chocolate and fruits and spices, gorgeous it is

Make a frangipane with ground almonds, add mincemeat, roll up in filo pastry brushed with melted butter with edges folded over the filling (cut sheets in half width ways with scissors - you can do the whole pack in one go). Bake at 180 degrees for 20-25 minutes. Pour a cold syrup of two cups of sugar to one cup of water brought to the boil then cooled over the baked pastries.

The filo stays crisp and the filling is delicious.

I add it to the fruit layer of apple crumble. Or in an apple crumble tart. It should be ok until next Christmas though (my mum has been known to use it several years out of date 😳)

You could always save it for next year , I do this when it’s reduced in the sale and is better matured for a year or two

I make apple cake and add mincemeat to it. DH likes it more than mince pies.

You can also mix it into ice cream.

There are the obvious “stir it in porridge, add to cooked fruit” type uses. You can add to it ice cream at the custard stage, reduce the butter by a third and add to scone mix, spread it on pastry then roll up and slice into pinwheels.

If you have opened it you could decant it into a freezer bag for next year. I always make a large batch of mincemeat in alternate years. Half gets used, half in ziplocks at the back of the freezer for the following year.

Oh and sometjing else I was thinking of when I was researching this, bread pudding, far superior to bread and butter pudding.

Spread a few spoonfuls on the bottom layer of pastry for an apple pie, use a tart apple such as Bramley.
Add to apples or plums when making a crumble.
Use to fill apples for baking.

Delia's mincemeat slices are really good too and the oats make them feel relatively healthy!
