Steak sauces & sides 🥩

TheLadyIsAVamp · 02/01/2025 23:20

I have kindly been gifted a huge bundle of excellent quality steaks from a friend. I have 16 10oz sirloin steaks and 12 12 oz ribeyes. Obviously they will be going in the freezer!
We adore steak but this is a lot and looking for some ideas although I could never get bored of steak 🥩 What's your favourite sauce/sides?

I love the traditional Diane sauce and peppercorn. Also a fan of chimichurri. Have never had a Béarnaise sauce so may try that. I like the usual chips, peas etc and enjoy noodle dishes topped with steak but my absolute favourite is simple steak house style baked potato with a nice salad.

Bearnaise is my favourite, definitely give it a try.

goonie33 · 02/01/2025 23:27

Love a peppercorn or Diane sauce.
Sides - potato gratin or chunky chips. Tomatoes. Mushrooms. Onion rings. Salad. The possibilities are endless.

No33 · 02/01/2025 23:34

Favourite sides include hassle back potatoes and garlic tenderstem broccoli with asparagus.

I like to make a red wine sauce, no recipe as such. Cook steak in olive oil and butter with rosemary and garlic. Then once the steak is resting reduce red wine in the same pan. Once reduced, add some cream of some sort, creme fraiche, single, double, even greek yogurt at a push if all that's available!

Dauphinoise potatoes (check out the BBC recipe for these)
Roasted shallots and roasted butternut squash. Touch of garlic and chilli chucked in there.
Green beans, asparagus and a peppercorn sauce.
This is my 'death row' meal and I have it once a month 😂

TheLadyIsAVamp · 02/01/2025 23:50

Oh these responses are making me hungry 🤤. @goonie33 I love a potato gratin but have never made my own as I'm terrified of a mandolin 😅. Love roasted vine tomatoes and mushrooms
with it too!
@No33 I have never been able to get on with asparagus but I do love tenderstem broccoli and green beans stir fried in garlic butter with a squeeze of lemon and a sprinkle of parmesan 😋 . Will definitely have a go at your sauce too! I am not a red wine drinker, is there a particular you'd recommend?
@mrsfollowill I think steak would definitely be included in my death row meal too! Although as above I'm scared of sliced potato dishes due to my clumsiness 😅

Proper frites and bernaise sauce. If I have veg purple sprouting broccoli and green beans are also delicious with bernaise sauce. I introduced my DH to its deliciousness on New Year's Eve.

Paradoes · 02/01/2025 23:52

Lidl sell boxes of 4 gratins that are lovely and you would only need to serve with green beans or broccoli

or Make caramelised onions

mrsfollowill · 03/01/2025 00:06

I'm feeling a tad hungry reading all these suggestions now- love roasted vine tomatoes and mushrooms as well- tip them on my death row plate along with a bottle of Malbec Grin

Cauliflower cheese with steak is a match made in heaven, especially with some mustard in the cheese sauce.

DoggoQuestions · 03/01/2025 00:16

Peppercorn with mushrooms mixed in

boulevardofbrokendreamss · 03/01/2025 00:26

Diane, peppercorn or bearnaise. Chips to dip. Something green to feel good.

GargoylesofBeelzebub · 03/01/2025 00:28

I love anchovy butter with my steak. I also make a lovely Stilton and port sauce.

I love a nice steak sandwich with caramelised onions and proper butter but maybe the steaks are too good quality for that!

Iamalltheyhavenow · 03/01/2025 00:33

Medium-rare sirloin, Bearnaise sauce, skinny Belgian style chips, watercress. Job done!

Quitelikeit · 03/01/2025 00:39

Ribeye Fajitas because you’ll soon be fed up with all those steaks and sides!

AdaColeman · 03/01/2025 00:40

You could try a Rossini style steak topped with a slice of smooth pâté such as Brussels pâté.
I also like a steak cacciatore with a mix of sharp flavours in the garnish, shallots, olives, anchovies, capers, gherkins, lemon juice, garlic, just use your favourite combination, and serve on bitter leaves such as endive and rocket, or on puy lentils.

Full disclosure, I have an old magnum bottle that I put undrank red into. It doesn't happen often haha. But that's what I use in food. It's a mix of many! But I'd recommend a dark burgundy, southern french. Nothing too expensive to cook with.

Also! Apologies, another post has reminded me, Dijon mustard too!

TwattyMcFuckFace · 03/01/2025 00:44

I love the traditional Diane sauce and peppercorn.

Me too OP and I can thoroughly recommend Morrisons. They sell pouches of ready made sauces at the meat counter and you can freeze them too.

Delicious.

And Iceland do lovely cheese gratins too.

They go lovely with steak.

TheLadyIsAVamp · 03/01/2025 00:58

@Quitelikeit one of my most successful dinner parties was a ribeye rubbed in a chipotle rub cooked medium rare and sliced, served with homemade chunky guacamole, pico de Gallo, Mexican red rice and homemade tortilla chips. Sooooo good, thank you for the reminder!

@Paradoes my other half works for Lidl distribution and said those are seasonal for Christmas? Please tell me he is wrong 😅

@AdaColeman excellent shout, cauliflower cheese is amazing with everything or even on its own! Hadn't even thought of that!

Mushrooms sautéed in butter with dashes of black pepper and Worcestershire

Sweet corn and any form of potato!

OhEs · 03/01/2025 01:20

Spinach with a bit of double cream & cheese is a lovely accompaniment, along with some lightly cooked tender stem broccoli.

Colinorpercy · 03/01/2025 01:28

Not very exciting but I do love just a garlic butter on my steak along with some truffle and Parmesan fries. Given you have so many I’d also be tempted to do a stroganoff with rice for something different.

Ooh, garlic bread makes a great side, too!

Ohthatsabitshit · 03/01/2025 01:56

Horseradish or seedy-mustard on the table. Melted butter on the steak before it’s fried, really hot pan and room temperature meat. Chips or mash and squeaky green beans.

For me cold larger is better than wine with it.
