I have kindly been gifted a huge bundle of excellent quality steaks from a friend. I have 16 10oz sirloin steaks and 12 12 oz ribeyes. Obviously they will be going in the freezer!
We adore steak but this is a lot and looking for some ideas although I could never get bored of steak 🥩 What's your favourite sauce/sides?

I love the traditional Diane sauce and peppercorn. Also a fan of chimichurri. Have never had a Béarnaise sauce so may try that. I like the usual chips, peas etc and enjoy noodle dishes topped with steak but my absolute favourite is simple steak house style baked potato with a nice salad.

@Ohthatsabitshit I adore horseradish with beef but I prefer a Dijon or a nice French mustard with it I think 🤔. I love wholegrain mustard with pork though!
I always thought it was better to add butter once the steak was cooked as it stops the butter/herbs burning? Or am I missing a trick?

I have a Ninja Sizzle which I use for steak now. I always let the meat come to room temperature before rubbing with a little oil. The Ninja Sizzle reaches temps of 260c I believe so I let that heat up and then put the steak on for a couple of minutes each side as I love it rare/blue before basting in a garlic and herb butter. My OH unfortunately likes it well done so I start his the same way but wrap loosely in foil with the garlic and herb butter and then air fry it at 160 for about 10 minutes. God this is making me hungry 🤤.
@Colinorpercy that's a great shout I adore a stroganoff and usually use much cheaper cuts for it but as I have so much I'll definitely make an extra tasty one!
@OhEs do you have a recipe for the spinach? I have had creamed spinach in restaurants and it's been gorgeous but my own attempts have not been great.

I love cauliflower cheese & broccoli with steak, but to be honest I will eat cauliflower cheese with anything, as much as I possibly can 🐽

I like my steak very rare with a very umami rich outside. Mine is cooked on a cast iron pan so I can’t comment on the ninja as I don’t have one. I probably shouldn’t comment on the ten mins wrapped in foil in an airfryer because that doesn’t sound good to me at all.

Temperature before you cook is very important. What I do is melt an ounce or so of butter in a Pyrex bowl in the microwave, add some oil some mustard and a bit of salt or soy sauce, and if the meat looks pale or particularly fresh/pink (not a good thing you want a deeper browny red ideally) I add about a teaspoon of chilli sauce which you won’t taste but adds depth. Then put the steaks in the gloop and marinade them while they warm up ( Nb it takes at least an hour and 2 or 3 is better). Then fry them just before you eat.
I like mash and green beans but chips are acceptable.

I think a steak sandwich can be fantastic, with fried onions, peppers and mushrooms.

@Ohthatsabitshit I would much rather he ate his steak like I do but unfortunately even the smallest amount of pink and he'd refuse to eat it and this method seems to work well without it shrinking too much or drying out.

We often do fancy steak sandwiches which we vary. So perhaps a ciabatta with steak, fried mushrooms and a little pickle. Or caramelised onions, non-mayo slaw and steak. Or I did a chilly cheese steak type thing I tracked down info for online once too.

Steak fajitas are amazing.

If it’s tender enough Pho might be a good option as the hot soup will “unpink” anything for your dh
