I've been eating a lot of soup and crusty bread or toasted sandwiches lately, really low effort. I do eat sardines on toast once a week, though.

Mine is currently baked salmon (not that cheap unfortunately, DH thinks it's extravagant but apparently it's really good for you).

I wrap each piece of salmon in tin foil after putting lemon juice and a bit of butter on. To accompany I dice up a couple of potatoes and a couple of sweet potatoes and bake in the tray along with the salmon pieces. No need to boil first. I give them about 15 minutes before I add in the salmon parcels, and then bake both together for about 20 minutes at 180°.

I like easy!

Homemade soup with dh's Homemade bread toasted. But tonight cheated with aldi gnocchi with their nice fresh sauce and grated parmesan cheese. Delicious and tasted so fresh.

We mainly eat Homemade be it curry etc. Dh is a fantastic cook but I make soups etc.

Chuck steak slow braised in bone broth with a few herbs for 4 hours. Mash and broccoli :-)

Waitrose mozzarella stuffed meatballs with fresh pasta. Meatballs in oven, pasta in boiling water. Done.

I love a packet of savoury rice with veggie sausages. It's so basic and I love to cook but when it's just me , it's a little junk treat.
Family wise they're enjoying a mince fried rice dish by Taming Twins lady

Homemade soup.
Blend of vegetables and stock. Add crème Fraiche and/ cheese.
Different every time, comforting and low ish on carbs (if you can resist crusty bread and butter).

Also really enjoying buttered runner beans at the moment.

Firecracker beef bowls from the Recipe Tin Eats. We've had a horrible cold the past few weeks and I've made a sort of chicken fajita ramen alot which has gone down well, the broth is so delicious. I guesse it's basically a chicken tortilla soup but with noodles instead of tortillas 🍜

I go through phases of “ clean eating” & tonight I just had a lightly smoked salmon fillet with steamed broccoli. My only vice was mayo on the side! I also like chicken breast with steamed broccoli & carrots.

Slow-Cooker Tuscan Chicken Meatballs With Gnocchi

Although I don't make it in the slow cooker. I brown the meatballs then finish cooking them in the oven, meanwhile make the rest of the dish and add the finished meatballs.
Served with toasted sourdough.

I've got pulled chicken in the slow cooker for tonight, in a really delicious chipotle/ BBQ/tomato sauce. I'll just put some baked potatoes on later and make some guacamole and salad to go with it.

With the price of meat going up I’m making a lot of dishes that are “sausages and…”
mash or oven chips
tomatoey beans (not from a tin)
Spicy chickpeas and plum tomatoes
tray baked veg
omelette
toad in the hole

But a dish I’m fixated with is Panzanella (cucumber, peppers, red onion and tomato salad with mustard vinaigrette and dry bread to soak up the juices) usually with feta or tuna. I don’t want the summer to end.

I eat a lot of Japanese food as I find it filling but not heavy. I eat a lot of sticky rice with stirfried veg (babycorn, broccoli, carrots, mushrooms) and either crispy tofu, salmon or chicken in a honey soy sauce - I top it with furikake and a blob of kimchi.
