Kimchi noodles are on the menu about once a week just now. Super quick to make and relatively healthy. I bloody love kimchi

I have phases where I eat the same day in and out. A couple of years ago, it was sesame chicken salad.

The last couple of months it goes like this:
Monday night make a huge batch of quorn curry and roast a chicken (a mumsnet chicken).

4 portions of curry for fridge/freezer.

Have chicken legs and salad for dinner, pick rest of meat off for sandwiches/salads during week.

Make chicken stock with carcass and leave to cool over night.

Cook pinto beans in chicken stock and add rice and spices after an hour.

Portion up 4 portions of rice and beans.

Rice and beans go with fresh baby plum tomatoes, coriander, lime juice, left over chicken and chick-fil-a sauce....I'm in heaven!!!

Obsessed with deep red tomatoes at mo.

Then it all starts again following Monday.

I get so excited on curry or rice and bean days!

Firecracker beef bowls from the Recipe Tin Eats. We've had a horrible cold the past few weeks and I've made a sort of chicken fajita ramen alot which has gone down well, the broth is so delicious. I guesse it's basically a chicken tortilla soup but with noodles instead of tortillas 🍜

Made the firecracker beef for dinner tonight and it was a massive hit! Thank you! Tasty, cheap and on the table 15 minutes after I got home. Perfect weeknight dinner.

Crispy Thai sea bass on rice or wrapped in lettuce leaves if not v hungry.

sea bass fillets fried in small amount sesame oil skin side down, with ginger, garlic, spring onion, lemongrass paste, Chilli and coriander. Sriracha and lime over the top to serve.

Beef casserole. I hate cooking and I have discovered that I can put all the ingredients for a beef casserole into the slow cooker in the time it takes me to boil the kettle in the morning for my morning tea.

8 hours later dinner is ready! I serve my casserole with mashed potato which is bought pre-made and you just put it in the microwave.
