Inspired by a thread else where. I’m going to make some soup but I think I need some with protein in other wise I want bread with it.

What are your favourite flavours and/or recipes?

I don't have a favourite soup as I like almost all soups. Mushroom is lovely, though, and last night I made this one. https://www.seriouseats.com/easy-creamy-mushroom-soup-quick I didn't add milk and used a vegetable stock cube. (Might have used chicken cube or stockpot if I'd had one in.) I did add Tio Pepe as I had a bottle open, and I added a good squeeze of lemon juice at the end and some finely chopped parsley. I made half the quantity in the recipe and it yielded three good bowlfuls. Excellent flavour.

Quick and Easy Creamy Mushroom Soup Recipe

Got some old mushrooms? They're perfectly fine for creamy mushroom soup. This recipe will work with pretty much any variety of mushroom, so go with whatever you like best.

I’m currently sitting at my desk eating this weeks soup which is roasted vegetable and it’s delicious, easy, low calorie and cheap…

1 butternut squash, halved
4 big tomatoes, halved
1 punnet of cherry tomatoes
1 large red onion (top and tailed and halved
1 bulb of garlic (top cut off)
2 bell peppers - destemmed/seeded and halved
(I also had a random courgette that I added)

Add all veg to a large roasting tray, drizzle with olive oil, sprinkle over paprika, chilli flakes, dried parsley and S&P and roast for 45 mins until soft
Pour it all into a blender (Squeeze out the garlic and scoop out the butternut squash flesh) with veg stock and blend till smooth.

I got 7 portions out of it but my Squash was a monster…

I also love

Thai sweet potato (with Shwartz Thai dry spice instead of paste to save calories/money) with or without chicken

Slow cooker gammon and split pea - so filling

Tomato, cannellini bean and spinach with harissa spices

Root vegetables with brown rice - with frozen root veg so great when you have nothing in…

I love leek & mushroom. Throw in halved new potatoes and some cashews and it's really hearty.

It's well worth making your own stock if you can be bothered. I keep a bag of peelings in the freezer, add to it over the week and make a veggie stock when I can be arsed at the weekend.
