Inspired by a thread else where. I’m going to make some soup but I think I need some with protein in other wise I want bread with it.

What are your favourite flavours and/or recipes?

I've a much loved seafood chowder recipe I found online years ago. Its my quick freezer meal as apart from the cream I usually have all the ingredients in the pantry or freezer.

Finely dice a shallot and fry in a little butter. Add in chopped chorizo and sizzle for a few mins then stir in a tablespoon of flour. Then add in 600ml fish stock and 100g diced raw potato.
Leave this to simmer until the potato is mostly cooked. Add in your seafood mix, I usually use the packet from lidl with a fist full of frozen jumbo prawns. Also add in 300ml milk and some smoked paprika and a pinch of nutmeg, turning the heat down to a very gentle simmer until the fis is cooked. Add a few tablespoon of cream and serve with bread of choice and a sprinkle of black pepper and parsely.

Thank you so much! That sounds really delicious 😋

So many lovely recipes! I like a mix of broccoli, courgette and leek, with masses of dill and some sour cream added to serve.

Ambitious kitchen recipe for "best ever chicken soup". It's great when you're feeling under the weather and I'm going to make it tomorrow. It's got pearl barley in it so pretty substantial.

Broccoli & cottage cheese with chives. 😋
Sounds wird but totally delicious. I also add the odd potato to give it some substance!

I love all the soups out of the mumsnet cookbook.
The unlikely lads one, which is mushroom and broccoli sounds like I should hate it but I really enjoyed it!

I've just made a spicy mexican bean and chicken soup for my lunches this week, it's tasty, really filling and satisfying and it's so easy and cheap! Works out around the 300 calorie mark per portion.

Frozen soffritto mix
2 tins of mixed beans in chilli sauce
Lentils
Chopped tomatoes
Tin of sweetcorn
Spices
Jalapenos and some juice from the jar
Leftover chicken
Stock cubes
Fresh coriander.

It came out a long time ago now, but I think Lindsay Bareham's book 'A Celebration of Soup' is fabulous and you'd never run out of recipes.

WillowTit · 01/10/2024 06:03

roast butternut squash
roast sweet potato
moroccan harira

rainfallpurevividcat · 01/10/2024 06:07

Broccoli & stilton, gazpacho, celeriac and potato with truffle oil, spiced parsnip or sweet potato or squash, pea and ham, corn chowder, tomato & red pepper. Also like vegetable soup made with a "stew pack" of veg from Aldi etc- onion, carrot, swede, potato - I also add garlic.

Thevelvelletes · 01/10/2024 19:05

Not a fancy one ..scotch broth and crusty bread.
Great on a cold day.

Ilovemyshed · 01/10/2024 19:57

Hedjwitch · 01/10/2024 20:09

Love soup, and make it often. My favourite is lentil or bacon and lentil.
Also make leek and potato or roasted sweet pepper and tomato.
Tried a cauliflower one last week as had a lot of cauli to use up and it was delish. Seasoned with caraway and nutmeg.

SqueakyDinosaur · 01/10/2024 20:43

I found a recipe online recently for roasted cauli soup, which sounded lovely, and I have a cauli sitting reproachfully in the fridge, so I think I'll give that a go. I was thinking nutmeg and maybe smoked paprika in it.
