Favourite soup, go!

For me - very classic, cream of mushroom or cream of chicken.

I make a lot of green soups - whatever green veg (courgettes, celery, broccoli, kale, bit of parsley) we have lying around, blended with some cream or creme fraiche.

I really like a broccoli and cheddar soup, but that’s more effort, so I don’t make it often.

Pea soup

Ooh I love a good soup!
Minestrone - great for using up whatever veg are lurking around
Curried cauliflower - roast the veg first
Leek, potato and stilton
Pea and ham

Parsnip and Apple. It has cumin as the main spice and is absolutely perfection in a bowl.

Butternut squash
Carrot and coriander.
@mindutopia that broccoli and cheddar one sounds lovely.

A really fresh boulliabaise (sorry, cannot even attempt sp) with loads of big juicy lobster, prawns and other fish.
I also love smoked haddock chowder/Cullen skink. A smokey creamy fishy one with potatoes.
The covent garden mushroom one is actually pretty tasty too. I'd get that as a shop bought option.

Proper lentil soup.

white winter veg is by FAR my favourite soup, it’s a Cully & Sully recipe but I can never ever find it in shops. Luckily they have the ingredients on their website:

• A good knob of butter
• 1 medium onion, chopped
• 1 medium leek (white only), thinly sliced
• 1/2 small-medium celeriac, chopped
• 1 medium parsnip, chopped
• 1/2 small head of cauliflower, chopped
• 1 medium potato, chopped
• 1-1 1/2 pints (500-750ml) tasty stock
• A generous glug of cream
• A good pinch of salt, pepper and sugar.

Carrot and ginger. Yum.

Oh and my current favourite - chicken soup with carrots, onions, garlic and celery with rice loads of chopped dill and a squitz of lemon.

Home made cream of tomato. I love the fact it is due of healthy veg but when it is blended down it has got a great texture.

Traditional Scottish lentil and bacon soup is always a winner here too.

I make a good leek and potato soup. But the best I have ever made is Jerusalem artichoke. Like velvet.
