I have rather rashly offered to make cake for 60 people for tomorrow..

In my head, at the time, I was going to make one cake a day every day this week, but I haven't and it's now 5pm the day before 😆

So, nothing fancy, nothing that needs decorating (that was never the plan anyway). It can be cut into smallish pieces.

I'm planning flapjack, fruit cake and one other...?

I was going to use my GM's fruit cake recipie, but I can't find it. In my head it was 8oz, flour, 4oz butter, sugar, fruit (which I always doubled), one egg, does that sound right? Enough sugar? I'll make 2.

What should the other cake be?

I always do loaf cakes , you can get a lot in the oven at once and they slice nicely .

Banana bread. Mush together, stick it in a tin et voilà! Pop in some chocolate chips and even better!

Basic-sponge tray bake, with icing and some sort of sprinkles/chocolate on top cut into squares.

For large numbers I do sheet cakes. Smitten kitchen has lots of ideas.

Old school vanilla sponge cake with icing and sprinkles. Weigh 4 eggs in their shells then use the same amount of butter, sugar and flour, mix everything with a splash of vanilla and once baked cover in white icing and sprinkles.

Victoria sandwich of course!

Weigh 4 eggs, use the same amount of butter, caster sugar and SR flour. Mix the butter and sugar for ages. Slowly add the eggs plus a little vanilla. Fold in the flour. Pop evenly into 2 x greased, lines sandwich tins, 25 mins at 165. Cool, sandwich together with seedless raspberry jam, sprinkle sugar.

This will give 12 good slices.

Big tray of brownies? Nigella’s recipe is easy, quickish and delicious. Cut into as many small portions as you can and serve with lots of strawberries.

Do you have a bread maker? If so you can have a loaf type cake cooking in there whilst you bake your fruit cake in your oven.

I’d do cup cakes - 12 in a pan, do a couple of pans, buy some ready made icing to put on top - bosh, bosh, done

Mary Berry “lemon drizzle” all in one sponge tray bake, pour lemon juice and granulated sugar mix on top when cold, chop into small pieces. Done

I would just make sponge cakes, 8oz butter sugar 4 eggs 8oz flour, then bake in a tray. You could do one plain one chocolate one coffee. Plain sugar Icing on top chocolate/coffee sprinkles done

loafcakes is a good shout as you could get 3 or even 4 in the oven at the same time.

My partner often asks me to make several cakes for work and if I’m in a hurry I usually make 3 or 4 different tray bakes , using Mary Berry or similar all in one recipes ( I’ve got them in books but expect they are on line too) loads to choose from or adapt from a basic mix , lemon drizzle , carrot , vanilla with buttercream top & drizzle , chocolate with chocolate ganache , chocolate orange with chocolate and orange drizzle , coffee , coffee & walnut , date and walnut , etc etc , they cut into loads of bits and go a long way

How about an old school cake? Or rather, a few of these. They are pretty quick to put together. You could swap out some of the flour for cocoa powder and make a chocolate one as well, with chocolate icing. If you don't have the time or the inclination to make the icing, you could just buy some tubs of icing.

Another vote for loaf cakes: chocolate and lemon drizzle are always popular. You can do chocolate and lemon drizzle in a round tin as well.
what you have at the house? What tins? How big is your oven?
Fruit cake requires longer time in the oven so you need to consider this. Sponge cakes are quicker.
Loaf cakes will get you more slices and easy to transport.

Lemon drizzle is quite easy, you can use ground almonds if you need a GFone, and no one can tell if it came out soggy cos it is drenched in syrup anyway
