I have rather rashly offered to make cake for 60 people for tomorrow..

In my head, at the time, I was going to make one cake a day every day this week, but I haven't and it's now 5pm the day before 😆

So, nothing fancy, nothing that needs decorating (that was never the plan anyway). It can be cut into smallish pieces.

I'm planning flapjack, fruit cake and one other...?

I was going to use my GM's fruit cake recipie, but I can't find it. In my head it was 8oz, flour, 4oz butter, sugar, fruit (which I always doubled), one egg, does that sound right? Enough sugar? I'll make 2.

What should the other cake be?

OK, I'm going to do apple flap jack, which is a recpie I stole from the school kitchen, so designed to serve lots. I have a tin like a school dinner tray to make it in. The apples are stewing currently.

Plus the Delia Brownies and a friend is going to make some cinnamon buns for me.

Fingers crossed.

Don't make a fruit cake - not popular and you have left it too late.
I'd be tempted to go buy ready made ones or at the very least get some mixes and do that.
Flapjack fine but wouldn't call it 'cake'.
