I'm rubbish in the hot weather and really can't be bothered cooking much. I feel like we've eaten a few cold meat/salad/cheese dinners recently and my kids aren't exactly salad lovers at the best of times. What is everyone else having as an alternative?

Cold meats / cheese, salad and flatbreads. Plus sauces and pickles. Everything laid out so people help themselves and make their own kebab/sandwich/wrap. Done it for the last three days in a row with different ingredients.

Cold salads from a local Italian deli. Aubergine caponata, couscous with grilled vegetables, cold breaded chicken escalopes, cheese, fruit.

I don't mind a cold lunch, but I want a hot meal for dinner.

I've got a lot of "here's-one-I-prepared-earlier" dishes in the freezer for when I don't want to spend long in the kitchen. Chicken curry tonight, probably oxtail stew tomorrow.
Traybakes are good. Low input, just need to add things to the oven at the right time.

I don't eat much in the heat. DH is away for work and the Dcs are good with cold chicken and salad. I ate rice with mushrooms and vegetables at around noon and that is me done.

I tend to get my calories in wine tbh

It has in these 'ere parts on the south coast...

I did a full on chicken roast (it being Sunday and all) last night so tonight is cheese and potato pie (no pastry, basically a load of boiled potato mashed with butter and milk and grated cheese and bunged in the oven for 30 mins) with boiled veg and cold chicken leftovers...Though I might forget the boiled veg and do some pan fried mushrooms, pepper, celery and spring onions... it depends how quickly the temp cools!

Pasta Puttanesca tonight… the heat doesn’t really affect what I eat, other than I won’t do stuff in the oven for ages as it makes the kitchen hot.
I can easily eat hot food in the heat though!

I roasted a load of veg at 0600 this morning. Half went in a fritata for tonight the other half will be added to cous cous with Harissa chicken (cooked in air fryer). Both will be served with salad of some description.
I might do fresh pasta one night as that only requires 4 min cooking, probably with garlic, chilli and prawns which can be done in the four minute cooking time!

Lots of wraps and sandwiches. If I need the oven on I will do three things at once and as early as possible in the morning.

I don't mind hot food in hot weather but having to use the oven just warm up the whole house when it's usually nice and cold compared to outside.

Enchiladas... had some peppers and onions already cooked and frozen. Tin of taco beans, spice paste, corn tortillas, passanda and cheese. Just an assembly job and oven for 20 min. I like a bit of spice when it is hot.

Thanks for the replies, we had cold tuna pasta tonight as it’s the kids favourite and got stuff to make chicken wraps and Greek salad for lunch tomorrow. It’s not so much that I don’t want to eat any hot food, more that I don’t fancy cooking it! We got loads of fruit to snack on as well.

I have just roasted a chicken. I'm about to heat up some ciabattas and serve "posh" open chicken sandwiches - I'll be adding some grated carrot and chopped cabbage, some pickles, some mayo and possibly some garlic sauce with chicken on top. I have some salad leaves that need using so I'll do a small green salad on the side, with some spring onions and possibly with some feta. I'll report back. Wink

Also, thanks for reminder of tuna pasta salad - haven't had that in ages. <puts it on meal plan with enthusiasm, particularly as have lots of peppers to use up>
