I'm rubbish in the hot weather and really can't be bothered cooking much. I feel like we've eaten a few cold meat/salad/cheese dinners recently and my kids aren't exactly salad lovers at the best of times. What is everyone else having as an alternative?

I cooked some chicken thighs in a pan with lots of spices and made burritos with a lots of fillings (rice, refried beans, spinach , cheese and salsa) so delicious

Tonight I made a traybake of chicken thighs, courgettes, shallots and cherry tomatoes with garlic bread.

While the oven was on I also roasted beetroot, and baked a banana bread (to minimise amount of time the oven is on today).

Tomorrow I won't have to cook as we can have banana bread for breakfast, beetroot pine nut and goat's cheese salad for lunch, and tomatoes and cannellini beans topped with burrata and fresh basil for dinner.

Smoked haddock..( 8 mins in oven with nob of butter... new potatoes..birds eye frozen peas.

Wraps are one thing we're all enjoying at the moment - garlic chicken / spicy chicken, lettuce, tomato, cucumber and cheese

Or something like chicken thighs, boiled potatoes and veg.
