I'm stuck in a salad rut. My staples are
-rocket / Parmesan / pine nut
-Roast squash / feta / herbs / chickpeas or couscous
-Roast Mediterranean veg (peppers, aubergine, courgette)
-coleslaw (the boring cabbage, carrot and onion type, sometimes jujed with a bit of fennel)

Any more exciting salads I can try?

Shaved fennel, rocket, parmesan. lemon & oil dressing

Beetroot (buy the packs of cooked but no vinegar), feta, walnuts, some sort of leaves, thyme. Balsamic & oil dressing.

Apple, celery, grapes, walnuts, cold chicken. Half mayo/half yoghurt dressing. Also great in a sandwich

Red pepper, cucumber, tomato, red onion, avocado, parsley, feta or halloumi, chickpeas or grains. Lemon & oil dressing

Roast veg, lentils, herbs, halloumi. Balsamic & oil dressing

Chicory, blue cheese, walnuts. Honey, oil, grainy mustard, balsamic dressing

Courgette ribbons (use a peeler), sliced radish, peas or double podded baby broad beans if you can be arsed, vinaigrette or lemon & oil dressing

Mixed leaves, lardons, cold cooked new potatoes (ideally sautéed) hard boiled egg or cheese, chives, walnuts or any nuts. Vinaigrette

Avocado, tomato, mozzarella, basil, oil & balsamic

Plus, if you wish, avocado, red pepper, yellow pepper, anchovies.

Optional serve with sliced cherry tomatoes on top.

Tomorrow having roast sweet potato, grilled halloumi, toasted pecans, avocado, leaves and basil with a honey, oil and thyme dressing.

Intrigued by this one - sweet and savoury. It's reminded me of a spinach salad my mum made which had I think Worcestershire sauce in the dressing. Sounded weird but was delish

Shredded duck (or chicken) hoisin salad.

Roast the duck or chicken and shred it, then let it cool.
Segment oranges - I do a couple each.
Toast pine nuts.
Make hoisin dressing - hoisin sauce, rice vinegar, orange juice, soy sauce and a bit of sesame oil. You want a fairly thin salad dressing, that is mostly hoisin, but has sharpness from the orange juice and vinegar - just add and taste.

Start with green salad leaves and rocket, scatter on the shredded duck, the pine nuts, the orange segments and croutons, then dress with the hoisin dressing.

Or, if you like blue cheese, pear, blue cheese and walnut salad is nice.

Or rare steak, thinly sliced, on a bed of salad, with blue cheese.

For both of those, I’d use a milder blue like dolcelatte or St Agur.

Ham and boiled egg is a classic.

Like rice niçoise! Do you just use normal white rice? This one might convince the kids..

It's reminded me of Thai salads too which are nice and pretty easy. Ideally green papaya but it works with grated carrots or unripe mango too.
Chilli, tomatoes, crushed peanuts, a dressing made with lime juice, garlic, dash of fish sauce and sugar and a bit of dried shrimp ground up. It's a lso low cal as no oil (though I always make up with plenty peanuts)
