I'm stuck in a salad rut. My staples are
-rocket / Parmesan / pine nut
-Roast squash / feta / herbs / chickpeas or couscous
-Roast Mediterranean veg (peppers, aubergine, courgette)
-coleslaw (the boring cabbage, carrot and onion type, sometimes jujed with a bit of fennel)

Any more exciting salads I can try?

I think it's the dressing that can really make a salad, does anyone know any great dressings?

Oblomov24 · 28/07/2024 21:38

Yum. Loving these.

Like rice niçoise! Do you just use normal white rice? This one might convince the kids..

Yes, just normal white rice, boiled or steamed. You could also add olives, peas.

If you make it fresh and have enough cucumber and finely chopped egg (and avocado if using), you don't particularly need vinaigrette. If it's been refrigerated or feels dry, we add a bit of lemon juice and maybe olive oil too. A balsamic vinaigrette or grated tomato with all of its juice would work too.

There's a boat moored beside our house that's named after Jean Gabin ; ) 🎭🐕⛵️

AdoraBell · 28/07/2024 21:42

I’m also in a rut so place marking. If DH had his way it would be iceberg lettuce, tomatoes and cucumber 🤦‍♀️

It is v yum. There's a lot of ingredients and a lot of chopping, but it is great with a barbeque and if you have a few mouths to feed!

JeanGabin · 28/07/2024 22:22

Thanks Dominique, that sounds great.
Good name for a boat! I always feel a bit of a fraud calling myself Jean Gabin as if I know loads about French cinema - I'm really named after the dog in Call My Agent. 🐶Though the dog was of course named after the actor. One day I'll educate myself

Cold baby potatoes, broad beans, gerkins, dill, red onion and mayo.

Puy lentils, honey roasted parsnip and carrot, rocket, halloumi.

Butter beans, garlic, lemon, parsley and basil.

Placemaking as I have missed all the hotel holiday salads I had been having.

SkytreeMadeOfClay · 28/07/2024 22:53

Any combinations of salad veg (the fun stuff, not too lettuce-heavy..) plus a good big spoonful of kimchi, a nice soft avocado, half a mini can of anchovies chopped up, garlic, olive oil and lemon juice. Plus maybe some nuts or seeds. All stirred up and delicious.

deeahgwitch · 29/07/2024 08:38

@JeanGabin don't forget the feta cheese with the strawberries, baby spinach leaves, blueberries and pecan nuts. Dressing is honey, balsamic vinegar and a wee drop of olive oil.

The tuna and white bean one looks great. Not convinced by grilled watermelon but could be wrong!

How very avante garde!

Iceberg wasn't around when I was a kid, it was Cos or floppy round, with cu & toms. That was it. And the leaves were dried in a used tea towel !
"Dressing" was Heinz salad cream.

No wonder I hated salad for years.

AlmostCutMyHairToday · 30/07/2024 19:03

Grated carrot + chopped kumquat* + olive oil + sherry vinegar + salt

*or grated orange peel

MyBigFatGreekSalad · 30/07/2024 20:02

Rocket, mozerella, tomatoes and pesto is my current go to!

ThinkingAgainAndAgain · 30/07/2024 20:06

Loving the sound of so many of these.

Balsamic glaze will brighten up many a salad too.

HighlandCowbag · 30/07/2024 20:13

Oooh placemarking cos these sound lush! And I'm fat. And love salad but get easily bored.

TheLadyIsAVamp · 30/07/2024 22:20

I could eat this grinder salad every single day, although it's not very healthy 😅.

Also love this one
Interview salad
And this Cowboy Caviar

I'm a big fan of Briannas salad dressings when I'm feeling lazy, particularly the poppy seed one.

maldivemoment · 03/08/2024 06:40

This Greek salad is the business. I think it’s the dressing (& possibly all the extra feta I put in!)

Could eat it every day…Greek salad
