I'm not Jewish either but this soup was described as a Jewish soup in my recipe book and is absolutely delicious:
The lemon juice is essential to sharpen up the flavour and you really do need 8 cloves of garlic!
Potage of Lentils
2 sticks celery
1 onion
1 potato
2 carrots
2 tbsp olive oil
2 pints vegetable stock
8 0z red lentils
2 lemons, halved
2 bay leaves
8 cloves garlic, crushed
1 tsp cumin
1 tsp tabasco
Chop celery, onion, carrots, garlic, peel and chop potato. Cook gently in olive oil without browning until softened.
Add hot stock, lentils, bay leaves, 1 lemon (halved). Bring to boil and simmer for 25-30 mins until soft.
Puree in a blender until smooth. Add remaining lemon juice, salt and pepper, tabasco and extra water to taste. Reheat and serve.
