Have just made Ant Worral-Thompsons version and it was rank! Anyone willing to share their tried and tested recipes?

You have to use Napolina tomatoes, cheap tomaotes just don't work.

add a spoon of molasses.... or brown suger if you don't have any.

much nicer and doesn't have that acidy tomato taste

1 onion
1 garlic clove
1 red pepper
half a bag of spinach

Fry in olive oil, add 2 tins of tomatoes, tomato puree, oregano and basil.

Simmer and then liquidise, then add a t-spoon of sugar- this will reduce the bitterness of the tomatoes.

Brown mince in a frying pan then add to sauce and simmer. Or sometimes I add meatballs to it.

i use tinned toms, chopped red onion, bacon, cherry toms cut in half, splash of balsamic vinger, 2 tbsps brown sugar, 3 cloves of garlic, oregano and basil.

Tomato sauce

Dice an onion really small and sweat it slowly in oil till it softens (low heat) then add a tablespoon of tom puree and garlic (? 1 clove)

Stir around briefly

Add a splash of old wine if you have it to deglaze the pan, then add a carton of passata and some sugar to taste. I also add a drop of Tabasco. It will look pretty unexciting a tthis point?BUT let it simmer slowly for 30 mins or until it thickens and turns dark red and it goes very sweet and nice.

Add veg to taste and simmer or parmesan on top of pasta.

Lately, we have been using the tomato sauce from the recent Jamie at Home series. It is quite basic but really good and can be used as a pasta sauce or for a pizza. Look Here.
It makes quite a lot so I put it in jars in the fridge and we use it through the week.

You are right twiglett - just between you an me I only use 2 tins (dont tell Jamie) and that is plenty for us

I was once told the key to no bitter tomato sauce is to use whole tinned tomatoes and only break them up after they´d simmered for about half an hour.

Onion, Mince, stock cube, tinned tomatoes, tomato puree, garlic, basil, oregano salt and pepper, worcester sauce. Basic pasta sauce. Used to use the jars of sauce - what a con they are!

ah so chopped tomatoes will be bitter but whole ones won't. that's interesting.

If you add the garlic once the toms have really got cooking you don't get the bitterness and you get a good powerful blast of flavour.
