Bought a tub on a bit of a whim, may make some kimchi….but any other ideas?

@TheGriffle theres a few kimchi recipes that seem to suggest you can use paste or flakes….

Tonight I marinated some chicken thigh pieces (honestly, could do an entire chicken if you wanted) in Gochujang, Tomato Paste, Honey and Worcestershire sauce - All measured “with my heart”. I jammed it in the oven until the chicken was cooked through and the sauce was caramelised on top. Served with rice and coleslaw. This combo makes the most delicious, slightly spicy BBQ kind of marinade. Mega easy!

We use in all sorts of recipes. My favourite, aside from ramen with a spicy meat topping, found purely because we got a Too Good To Go Bag with a mountain of cocktail sausages, is this one:

Tbsp miso paste, tbsp butter, tsp gochijang, tbsp lemon juice melted together in a pan makes an amazing butter to spread on BBQ corn on the cob. Yum..

Also yes bibimbap.

If anyone has a good vegetarian Korean recipe book to recommend, I'm all ears. Have enjoyed the Rukmini Iyer and Meera Sodha Korean inspired recipes I've found.

One thing I wish is that I could find a gochujang that’s gluten free. If anyone knows of one, I’d be grateful for a steer!

Sempio does a gluten free version. I've only tried the regular version though so not sure if it's any good.
