Hello everyone!
I get my fruit & veg from the local market stand on my street.
It's only a few metres from my front door and I tend to go back out when he's packing up to see what he has left.
Anyway I came home with x2 big market size boxes of tomatoes for a tenna. I slightly underestimated how many tomatoes I have.
I've already made passata, baked tomato and Parmesan risotto (it's a hello fresh recipe and it's gorgeous), I've done roasted tomato foccacia, lasagne & beef tomato mozz and basil summer salad.
I'm still left with over 85% of the tomatoes I came away with.
It's mixed with large tomatoes, vine tomatoes, cherries, beef tomatoes, and some yellow & purple tomatoes.
We're a big tomato eating family. Has anyone got any recipes or ideas? I don't think my freezer will fit them all!!
I don't think I've said tomato in the same sentence that many times in my life!
Perhaps a roasted tomato olive oil? Or chutney or some kind? Guhhh so many tomatoes.
