Help! SO MANY TOMATOES

Hello everyone!

I get my fruit & veg from the local market stand on my street.
It's only a few metres from my front door and I tend to go back out when he's packing up to see what he has left.

Anyway I came home with x2 big market size boxes of tomatoes for a tenna. I slightly underestimated how many tomatoes I have.

I've already made passata, baked tomato and Parmesan risotto (it's a hello fresh recipe and it's gorgeous), I've done roasted tomato foccacia, lasagne & beef tomato mozz and basil summer salad.

I'm still left with over 85% of the tomatoes I came away with.

It's mixed with large tomatoes, vine tomatoes, cherries, beef tomatoes, and some yellow & purple tomatoes.

We're a big tomato eating family. Has anyone got any recipes or ideas? I don't think my freezer will fit them all!!

I don't think I've said tomato in the same sentence that many times in my life!

Perhaps a roasted tomato olive oil? Or chutney or some kind? Guhhh so many tomatoes.

Panzanella is absolutely delicious. I'd also roast tomatoes and make a sauce but reduce it slowly so it was concentrated and then freeze. I'm hungry now

Some tomato sauce made with onion, garlic and possibly herbs. Freeze in jars.

We cut them in half and put in a roasting tray with quartered onions and whole peeled garlic gloves. Good drizzle of olive oil, salt and pepper and roast until soft and starting to caramelise. Then I blend it (and food mill to remove skins but that's optional). Makes a delicious basic tomato sauce which freezes beautifully or if you're short on freezer space you could try the water bath/glass jar approach.

I have stacks every summer as I grow about 80 tomato plants.

Any excess I have are put through my juicer, and reduced down to a thick paste and frozen in muffin containers or ice cube trays and then kept in freezer bags for use instead of tinned tomatoes or passata or pizza base.

Oven dry them, and store in jars of good oil with some garlic cloves and seasoning

If you "sun dry" the tomatoes in the oven - use all three racks on a low heat for a long time, they'll keep well and can be added to everything.

Chili and tomato jam. It's a bit of a ball ache but so worth it! You can blend it if you don't fancy chopping.

Do you have a community larder near you? Ours takes fresh fruit and veg from local gardeners, I’m sure they would love some tomatoes.

This recipe is great for using up a glut of tomatoes. I just halve or quarter bigger ones, and put the cherry ones in whole. I’ve added courgettes or peppers too if I’ve got too many of those in the past. It’s also even better if you crumble on some feta cheese for the last 10-15 minutes of cooking.

Hello!

So I made 'sundried' (oven) tomatoes.

Tomato and chilli jam
Tomato and honey chutney (this is really lovely)
Ketchup
Froze a load of tomato purée
Tomato and cheese risotto
Roasted tomato and caramelised onion focaccia
Have a big bag to the neighbour, gave another big bag to the community pantry.

The rest I've blitzed up with some seasoning and frozen in ice cube trays.

Bloody sick of the sight of tomatoes now but it was interesting trying to find things to make with them!

When I’ve had a glut of home grown tomatoes, I take off their skins, put them in vacuumed sealed bags and then freeze them.
They can then be defrosted and used in a variety of ways.

You've been busy! What recipe did you use for your chutney?

@PossumintheHouse I did the recipe that you linked! (I think it was you, apologies if not). I lessened the sugar content and skipped the raisins and added honey instead. It's beautiful!

We ate some tonight with some crackers and anti pasti meats, topped with a few walnuts. Absolutely delicious!

Will be doing more at Christmas and giving it as gifts. I'd never have thought to pair the two together. Going to play around with some of the different ingredients too.
