My childrens' favourite - black dahl.

We use this recipe.

If you make this, do note: must use full fat coconut milk, and don't bother using the amount stated, put the whole lot in. Unless your children are demanding a small glass of coconut water (which one of mine does).

I used reduced fat coconut milk last time and it was not as good.

Blitz it and make cauliflower rice and serve with curry (cauliflower curry if you must!)

Spiced cauliflower steaks can be really tasty but cauliflowers don't make much of a meal in themselves as they don't contain much nutrition. You can have a big plateful and still be hungry because your body does actually need food. This is why Cauliflower Cheese is such a great meal - all the nutrition is coming from the lashings of delicious cheesy sauce - the Cauliflower is just giving you some texture to chew while you enjoy the cheesiness. So if you go with the steaks you need to make sure the sides are nutritious and filling.

Slather it in korma or tandoori paste mixed with plain yoghurt - a really thick coating - and roast it. Serve with chopped parsley, almonds, tahini, pomegranate seeds if you're feeling fancy. Cut wedges out, like you would with a cake, to serve.

Roasted cauliflower is delicious,so many different spices you can add to it,or parmesan etc.
Use leftovers to make a really tasty soup.

Macaroni cheese - you blitz the cauliflower in to the sauce. It makes it a lot lighter!

You can get cauliflower wings as a veggie alternative to chicken wings a lot of places now. I've never made them myself, only had them in gastro pub type places but they're delicious and I'm sure there's a recipe online!

Whole roasted cauliflower with spicy Indian yoghurt marinade.

Cauliflower cheese. Add some macaroni or similar pasta if liked.

Cauliflower soup with plenty of garlic.

Cauliflower, tomatoes & cheese pasta bake.

I'd make a range of things, and then par boil the rest and freeze it for curries or roast dinners.
