If you had to make a main meal out of a cauliflower, what would you make?

I bought two massive cauliflowers.

Whoops just reread and realised it's a main meal required

Does anyone have a recommended recipe for cauliflower steak please?

Cauliflower cheese, with onions, bacon and mushrooms in the cheese sauce, then top it with grated cheese mixed with breadcrumbs. Bake until crispy. Eat with garlic bread.

I'd get a takeaway. 🤢🤢🤢

Ottolenghi has a delicious recipe for cauliflower steaks with celeriac but I can't lay my hands on it.

We've got a Hello fresh recipe somewhere for something like buffalo cauliflower with other stuff. Really tasty but I can't remember enough details to Google the recipe for you. I'll look it out next time I'm in the kitchen. If I remember 🙄

Gobi aloo saag. Really hot and spicy with lots of chilli and cumin.

@StellaAndCrow why was it watery? Did you add water? Or boil the cauli?

Lots of nice recipes here, but just as an extra - for a starter I really like raw cauliflower, if crisp and fresh. Goes very well with dips such as hummus or smoky aubergine or taramasalata (home-made, not the yucky ready-made stuff) or sour cream with chives, garlic, parsely.

I had no idea it was vegan until I googled the recipe. It's from one of the Higgidy cookbooks. I've cooked it for lots of people and they've all loved it.

But it's not cauliflower, it's all celeriac. You will love it....

Blanch florets for 3 mins then allow to steam dry. Blitz some wholemeal breadcrumb and mix with finely grated/crumbled blue cheese. Dip each floret in seasoned flour, egg and then the cheesy breadcrumb mix. Place on a baking tray, spray with oil and bake.
