Cooked beetroot - what can I do with it?

Fancied some beetroot to add to a salad but could only find precooked packs of 4 (not pickled). I now have three left and don’t know what to do with them.

I’ve looked for recipes but they mostly ask for the beets to be grated which won’t be possible. Before I resort to Borscht, does anyone have something they like making? Hopefully not too complicated and can be meat based.

Dice them, finely dice onions and tomatoes and make a salsa with balsamic?

Or beetroot tarte tartin if you can get puff pastry. Can find the recipe.

Lentil, beetroot and goat's cheese salad. Take cooked lentils, add olive oil and lemon juice, cubed beetroot, crumbled goat's cheese or feta, chopped spring onion and pasley (optional). Toss it all together gently. Serve at room temperature, or warm if you like.

Meera Sodha has a recipe for beetroot shami kebabs. The original recipe just called for the cook beetroot to be mashed rather than pureed.

I like beetroot, goats' cheese and puy lentil salad. Plenty of chopped parsley and a lemon, olive oil and mustard dressing.

Or make a scandi style beetroot salad and have with smoked mackerel or pickled herrings.

Chopped up beetroot, apple, celery, feta. Salt and pepper and mayo. It's a lovely salad.

I have a similar situation and I am going to try this recipe, I know it’s not for cooked beetroot but I reckon due to the liquid it will be ok. I’m having to proportion the amount by half. I guess you could add beef to it as well if you wanted.

Borscht - often it does say to grate it, but you don't have to, I've added it chopped.

Dice, and top with a dressing of Greek yoghurt, and one or two from chives, spring onions, parsley, crushed garlic. Serve with ham, cold roast beef or sausage.

Dice and add to a salad of walnuts, chopped apple, finely shredded white cabbage with a mayonnaise dressing. Serve with smoked salmon.

Slice and add to cold new potatoes, chickpeas or haricot blanc, sausage or roast ham, add vinaigrette dressing for a hearty winter salad.

Look for a chocolate and beetroot cake recipe. They are lovely. Tastes like chocolate cake but so much more moist.

I really like a salad with a bed of spinach leaves, then beetroot, feta, walnuts and pomegranate seeds. Then olive oil, balsamic vinegar on top. It's weirdly delicious.

You can roast the precooked ones. Drizzle with a little olive oil and roast for about 20 minutes. Melt some goats cheese on the top towards the end. Have with salad
