Cooked beetroot - what can I do with it?

Fancied some beetroot to add to a salad but could only find precooked packs of 4 (not pickled). I now have three left and don’t know what to do with them.

I’ve looked for recipes but they mostly ask for the beets to be grated which won’t be possible. Before I resort to Borscht, does anyone have something they like making? Hopefully not too complicated and can be meat based.

You can make kale, or any green salad with the beetroot with some pumpkin seeds.
Avocado and beetroot salad with olive oil and vinegar or without vinegar.
You can just eat the beetroot on itself with olive oil and sprinkle some vinegar.
