Smoked haddock meal ideas

CBA with fish pie and don't like kedgeree but for reasons known only to him, DH, has purchased 2 packs of smoked haddock fillets. To be fair, I did mention wanting to eat more fish but I've got no clue how to make a meal out of these.

How would you cook them and more importantly what would you serve with?? Thank you!

Fishcakes

Cooked in milk and butter and served with mashed potatoes and peas etc. Or on top of a risotto. Turn into posh fish cakes? I have it poached as above with broccoli and carrots as I don't eat potatoes much.

Agree with cullen skink, otherwise we eat a lot of smoked haddock cooked in butter in the oven with mash and veg or I serve it with a ratatouille style of veg. Or you could mix with pasta and creme fraiche.

Smoked haddock chowder?

Kedgeree ! Made it last night and all 6 of the family from 18 - 63 wolfed it up

Haddock mornay.
Poach the fish in milk and fish stock.
Wilt some spinach and put it in an oven dish with some nutmeg on top.
Take haddock out of poaching liquid and place on top of spinach.
Thicken milk mixture with a roux or with cornflour then add as much grated cheese as you dare.
Pour on top of fish and then grill for a speckled brown top.

My absolute favourite breakfast is smoked haddock pan-fried in butter, topped with fried eggs, and Patak's chilli pickle on the side. I'm aware that this isn't for everyone, but I think it's sublime :)

Or maybe Omellete Arnold Bennet?

I make a cheese sauce, sear the fish smother in sauce top with grated cheese. Bake. Serve with mash and tender stem broccoli . Mmmmmmm!!!

DelilahBucket · 10/02/2024 23:31

Put in an oven dish, top with cooked bacon, pour over double cream, add sliced tomatoes, grated cheddar and black pepper and cook on the oven. Serve with mash and any veg you like on the side.

I make this a lot . It's delicious and quick with no faffing about making a sauce or peeling spuds. I don't bother with buying fancy breadcrumbs or parmesan, it's great with the homemade breadcrumbs I keep stashed in the freezer and some grated cheddar.

Smoked Haddock Loins & White Bean Gratin Recipe | Waitrose & Partners

This dish brings together flaky fish topped with a lemon and pepper crust and the smooth buttery texture of the white beans flavoured with fresh tarragon.

I shall try this. I do the potato one all the time.
I can never bring myself to buy breadcrumbs either.

EatInTheMiddleOfTheNight · 11/02/2024 10:13

I don't bother with fresh tarragon either. Dried is fine. I also swap out the leeks for onions and the spinach for any dark green leafy veg like chard which might need using up. It's a very forgiving recipe.

Poach in water and serve with a poached egg on top. Yum.

Or, make a white sauce. Skin and cut up the haddock then add to the sauce. Simmer till haddock cooked (5 mins or so), then add handful of grated cheddar and some frozen sweetcorn. Put in baking dish, cut some cherry tomatoes in half and scatter over top, add more grated cheese and put under a hot grill until bubbling.

It was a staple meal when I was growing up! Poach the fish in milk, gently, then serve with a good mashed potato (lots of butter!), and a poached egg.

Sounds weird, but it's both satisfying and very comforting.

Smoked haddock and macaroni cheese with a herby crust

We've got some for tonight. I'm serving it with green beans, poached eggs and pilaf.

Illpickthatup · 12/02/2024 18:49

Before I went vegan I used to make a smoked haddock risotto with a poached egg on top. I had asparagus and peas in the risotto.

Phineyj · 12/02/2024 18:50

I just eat it as it is with some green salad and a piece of toast. It's never occurred to me to cook it. It's yummy as it is!

Are you thinking of smoked mackerel? Smoked haddock is raw.
