Smoked haddock meal ideas

CBA with fish pie and don't like kedgeree but for reasons known only to him, DH, has purchased 2 packs of smoked haddock fillets. To be fair, I did mention wanting to eat more fish but I've got no clue how to make a meal out of these.

How would you cook them and more importantly what would you serve with?? Thank you!

Oh and I cook in the oven in little oiled foil parcels.

Cullen skink or risotto.

For the risotto, bake the haddock in tin foil with butter while you're cooking your risotto. Then when the risotto is done, flake the haddock and all the juices in and stir. I add frozen peas at this point too.

The risotto itself is just done in plenty of stock water with chopped onion and garlic. I don't bother with white wine.

Omelette Arnold Bennett. It's pretty much the only egg dish that the kids unanimously like.

Smoked haddock risotto - cook the rice with veg stock (and white wine if you have it), flake in the cooked fish, add petit pois and some rocket, stir through a dollop of crème fraiche and grate over some Parmesan. Utterly delicious.

Smoked haddock rarebit. I use Applewood smoked in addition to the mature cheddar for a very cheesy, smoky flavour. It's lovely as a comforting Saturday night supper served with chunks of crusty bread.

You can just bake it in foil with lemon and seasoning like unsmoked white fish, I did this the other night. Did it with some roasted cherry tomatoes, couscous done in veg stock and some roasted kale. The smoked haddock flavour was a good strength with the kale too.

I make this a lot . It's delicious and quick with no faffing about making a sauce or peeling spuds. I don't bother with buying fancy breadcrumbs or parmesan, it's great with the homemade breadcrumbs I keep stashed in the freezer and some grated cheddar.

This. The smokiness from the fish is imbued to the eggs if you poach them in the same liquid. Brown bread and real butter on the side. Our travelling fishmonger recommended it. Then freeze the leftover milk to flavour the sauce of your next fish pie.

You can just eat the fish on itself with some boiled sweet potatoes and with some boiled broccoli, or avocado salad with some olive oil :)
