I have lots of opened packets of rice (risotto, paella, basmati, white long grain, brown long grain).

Apart from different paella/risotto recipes, or using as side dishes for chilli/curry etc, what are your favourite main course recipes that involve rice?

I've made & enjoyed this arroz al horno recipe before, will make it again. I think I made it first time with cut up pork chops instead of belly as I had them in the freezer and needed using up, worked fine.

Mexican style spiced rice - cooked in a frying pan with tomatoes, roasted red peppers, smoked paprika, black beans and tofu or chicken or prawns. Served on its own or in a burrito with cheese and guacamole.

We do this with pan-fried chicken or fish. I also often add extra vegetables.

I discovered and loved Meera Sodhas seasonal pilau series from East a couple of years ago Winter Spring Summer Autumn

Chicken and Chorizo Jambalaya is aways a winner is this house

I'm also a sucker for kedgeree, poke bowls, jollof rice, and rice pudding (use basmati for kheer, or risotto rice for more traditional).

one of my favourite meals to make is: approx 125g of mince, fry it off with a tsp cumin seeds, tbsp Cajun seasoning, tsp all purpose seasoning, onion, garlic, and whatever veggies I have languishing in my fridge (mushrooms, broccoli, asparagus, courgette, pepper, sweetcorn are my favourites). Then I add a cup of rice, some tomato puree and about a half tsp of veggie stock powder and steam the rice in a similar way to a pulao and then I’ll sprinkle fresh coriander once it’s done and sometimes cheese if I fancy it. I love it!

Although it does use a couple of Indonesian ingredients which would be a waste if you decided not to make it again!

I’m making a Nando’s style mixed rice in a couple of days time so can’t recommend a specific recipe but lots available on social media.

Risi e bisi

You can boil risotto rice like pasta and then drain it. This is nice with a variety of soft Italian cheeses stirred through (gorgonzola, taleggio, fontina, parmesan). Melt the cheeses together first in a bain Marie.

Chicken and rice: fry skin-on chicken breasts and thighs skin side down, rendering the fat. Set aside. Add some butter to the pan and then fry some onions. Add chicken broth. Arrange chicken pieces on top. Cover and bake until done. Give it a blast under the grill at the end to crisp up the skins a bit.

I love rice. I adore biriyani, pilafs, egg fried rice etc. I have also made the Spanish bbc rice dish you liked so much OP and agree it’s wonderful.

Thank you, I didn't expect so many great ideals! I will aim to have a rice dish on my meal plan weekly til I've used all the ideas, then go round them again!

I'm also trying to actively seek out different pasta bake recipes to make a change from tuna & sweetcorn or bolognese type sauces, Recioes for those are easier to Google. Here's a recent favourite, a token thank you for your suggestions:

Vegetable Fried Rice
Ingredients:

  • 2 cups cooked rice (preferably chilled)
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 eggs (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:

  1. Heat oil in a large skillet or wok over medium heat.
  2. Add garlic and onion, sauté until fragrant.
  3. Add mixed vegetables and cook until tender.
  4. Push vegetables to the side, add eggs, and scramble (if using).
  5. Add rice, soy sauce, and oyster sauce; mix well.
  6. Stir-fry for 5-7 minutes, until rice is heated through.
  7. Season with salt and pepper. Garnish with green onions and serve hot.
