Looking for savoury rice recipes

I have lots of opened packets of rice (risotto, paella, basmati, white long grain, brown long grain).

Apart from different paella/risotto recipes, or using as side dishes for chilli/curry etc, what are your favourite main course recipes that involve rice?

I've made & enjoyed this arroz al horno recipe before, will make it again. I think I made it first time with cut up pork chops instead of belly as I had them in the freezer and needed using up, worked fine.

Arroz de pato - Portuguese winter comfort food. I like to add breadcrumbs mixed with melted garlic butter sprinkled on top about 10 minutes before it is cooked so they crisp up. The recipe made with chicken and bacon instead of duck and chorizo is also nice.

You can, but it's a terrible waste of expensive risotto rice.

I love the sound of this. Unfortunately I can't see the recipe as now behind a very expensive paywall. I can afford £24.99 a year but think it's greedy on their behalf so refuse to sign up. That said, they have a 99p for 3 months offer which I might take advantage of.

I made mushroom risotto early this week.

Soak a handful of dried porcini in boiling water. Sauté a finely chopped onion in oil (I used chilli flavoured oil), add garlic to taste (I used 3 large cloves) add a cup of risotto rice and sauté 1 minute. Add the porcini and 3.5 cups water and a stock cube plus 2 tsp dried oregano. Add the rind off the Parmesan cheese to the water whole. Cook for 15-20 minutes until rice is softened.

Meanwhile grate half a block of Parmesan or similar and set aside. I then pan fry fresh mushrooms and set aside, then a rump steak and rest the in that pan fry off asparagus, green beans or tender stem broccoli so it cooks in the meat juices (microwave for 3 minutes first if thick stems). Add the cheese and fresh mushrooms to the risotto for the last minute of cooking, slice the steak. Serve the risotto with the steam and veg.

Phone, kindle and laptop.
I don't know if it is because I signed up with the BBC many many years ago.

They used to have forums for foodies and for parents - sadly no longer in existence, but I have a log in, so maybe that's why I can access the recipes?

@RampantIvy I've just signed up for the 99p 3 month trial - and bizarrely the recipes I bookmarked years ago are there. I really don't understand it. I really like the site and have used it loads over the years, I have no problem with paying for a useful and well maintained app - but £24.99 a year is a lot. Especially as people are saying they are still accessing it for free!

I’ve had that happen with BBC recipes - sometimes (the same) recipes are behind a paywall, sometimes they aren’t. It’s very strange… it wasn’t behind a paywall when I posted the link! There are plenty of alternative recipes for Portuguese duck rice if you Google. It’s a bit like any traditional dish though, everyone’s grandmother has there own version 😂

You could brown some chicken and veg, add stock and a packet of cooked rice and simmer till stock is absorbed. I use a packet of golden vegetable and a Mexican type rice. Quick and easy tea.
