Urgent suggestions needed for a veggie meal tonight!

I'm unexpectedly cooking for 6 people this evening. I don't eat meat and can't cook it, so it will have to be vegetarian. One person doesn't like pasta and another isn't keen on rice. My DH isn't very keen on fake meat of any sort but will eat it if required. We all ate curry yesterday so that isn't an option.

Can anyone suggest a tasty dish that I could produce that is likely to keep everyone happy?! I can go to the supermarket before cooking so ingredients shouldn't be an issue.

Or, tuna sweetcorn plait.

rolled puff pastry. Chop mushrooms into bowl, add mayo, salt pepper. Mix and add sweetcorn. Pop into middle section of pastry and plait over the filling. Brush with egg, oven. With a salad or maybe roasted veg.

Various fillings, cheese, beans, 5 bean chilli, egg mayo, stir fried vegetables, garlic mushrooms etc

Served with salads.

Dips and tortilla chips.
Salad.
Wraps and stuff for fajitas or taco shells, veggie chilli and rice.

Something for everyone.

3 bean chilli would be my go to. Black beans, kidney beans and cannellini or any combination of your choice.

Serve with rice for those that want. Would the other person eat cous cous?

Salad, tortilla chips, plenty of sour cream and guacamole with salsa. And cheese. Lots of cheese.

If you get get filo pastry - butter a pie dish well and layer up filo with butter between layers leaving overhanging sheets to make a lid. Sauté spinach, onions, oregano (dried) add fresh parsley, chopped olives & crumbled feta, put into pie dish and cover with the remaining pastry, cook until golden. You can make individual ones as an alternative. Serve with 1/2 inch cubed roasted potatoes sprinkled with oregano and roasted Mediterranean veg.

Vegetable fajitas or Loaded nachos are the go to here. Aubergine, courgette, peppers and lentils used as a base for veggie lasagna is my favourite veggie meal, but not if they don't like pasta, though it could be a stew served with fresh or part bake bread.

This isn't veggie though, tuna isn't suitable for vegetarians. It does sound like a nice suggestion though so maybe could be done with veg and beansprouts instead!

Though I am completely loving the idea of a jacket potato buffet....

Should have been clearer that fish isn't an option. Also forgot to mention that one member of the group has a nut allergy.

Grab some puff pastry, roast some aubergine, red pepper and cherry tomatoes. Assemble layers on the puff base and top off with buffalo mozzarella and fresh basil. So simple and tasty.

I would do a 3 bean chilli with rice as some said above and a jacket potato for person who doesn't eat rice or vegetarian pizzas with salad

Burritos / wraps with nachos or tacos does sound like a great shout.

I'd say a lentil based cottage pie or something but that might take too long.

Pizza?
