Urgent suggestions needed for a veggie meal tonight!

I'm unexpectedly cooking for 6 people this evening. I don't eat meat and can't cook it, so it will have to be vegetarian. One person doesn't like pasta and another isn't keen on rice. My DH isn't very keen on fake meat of any sort but will eat it if required. We all ate curry yesterday so that isn't an option.

Can anyone suggest a tasty dish that I could produce that is likely to keep everyone happy?! I can go to the supermarket before cooking so ingredients shouldn't be an issue.

These fajitas are super easy and super tasty. We had them once when we had vegetarian friends stop by unexpectedly and we've cooked them quite a few times since Wink

3 bean chilli would be my go to. Black beans, kidney beans and cannellini or any combination of your choice.

Serve with rice for those that want. Would the other person eat cous cous?

Salad, tortilla chips, plenty of sour cream and guacamole with salsa. And cheese. Lots of cheese.

I'd do bean chilli, loaded cheesy potato skins, guacamole, tortilla chips, a raw shredded slaw salad with lime juice.

I went for a tex mex theme in the end. Made enchiladas and got dd to make guacamole and some salsa. It was very tasty and went down well... thanks to all for the suggestions! I will be using some of the other ideas for my own family!

I do a fabulous chilli with bulghar. You soak the bulghar in heated tomato juice for about 15 minutes and then just tip it in after cooking onions etc. Add beans, peppers, carrots or whatever else you would normally put in a chilli. It's a lovely texture and both meat eaters and veggies I've served it to loved it. Similar volume of tomato juice to bulghar. Maybe about a quarter extra juice.

The other thing I make that always goes down well with meat eaters is lentil enchiladas.

Cook onions. Add ground coriander and cumin. Add tomatoe puree. Add red lentils and stock. Cook them until soft. Add some chopped mushrooms and jalapeños. Wrap in tortillas. Top with a think layer of salsa and grated cheese. Cook for about 15 minutes at about 160.
