Warm vegetarian breakfast roll fillings

Looking for warm vegetarian fillings for bread rolls as an alternative to bacon butties. Not tofu as not liked by the main person I'd be making these for.

My go to is baked portobello mushrooms, sometimes with cheese; plant based sausages; or cheese, spinach & onion,
Looking for some different options please.

My carnivore husband loves a baked mushroom, hash brown and spinach roll. I love a good old baked bean roll as my comfort food breakfast

Arghhh sorry missed out of the OP: the main vegetarian I prepare this for will eat eggs if he can't see them eg in cake but cannot stomach eggs on their own. Sorry for not mentioning this in OP, I intended to alongside tofu.

On Boxing Day I had one with: stuffing, roasted garlic potatoes, smoked cheese and mustard and it was bloody lovely.

I love home made hash browns with mushrooms in a sandwich. In fact I had one yesterday for Brunch, and it was delicious!

What is also lovely is fried potatoes and onions with Spinach added at the last minute. Served in sliced foccacia.

Toasted sandwich with tomato and marmite is also a simple favourite.

My absolute favourite, however is a toasted sun dried tomatoes, cheese and avocado sandwich. I will be forever grateful to the lovely South African host I stayed with whilst working on a farm in New Zealand.

Ooh make a cheese and tomato turnover it's so easy. Square of puff pastry (the kind you buy ready rolled) and then some grated cheese and slices of tomato. Fold over two corners so you have an HSBC logo shape. If you're feeling fancy, add some dried herbs. In the oven until golden brown. Breakfast of (vegetarian) champions

God, I love potato scones! (NE England here and widely available) They bring back wonderful memories of cooking breakfast outside our tent when we were camping as a kid. Usually by the banks of Loch Linnhe.

A fried mushroom and tattie scone roll is actual heaven. See also veggie haggis, I eat meat but have veggie haggis for preference as I prefer the texture. Veg haggis, tattie scone and brown sauce on a morning roll. Dear god I may have to go to the shops...

Was also thinking something along these lines. Or simply store-bought ajvar along with halloumi or other cheese.

I had a vegetarian stovies once from a night buffet at a Scottish wedding. Think it was served in a roll… Anyway delicious!

Garlic mushrooms with roasted tomatoes. (Sometimes i roast them in balsamic vinegar and it is a nice change)

I often use hummus as a base/sauce
Smashed avocado it actually goes quite well with veggie sausages.

Peanut butter and banana for a sweeter option, i usually have that in a wrap for a quick to go breakfast.

I do sometimes make an avocado dip with cream cheese that is quite nice as a spread for breakfast baps..

Or occasionally i use chilli jam to jazz it up

Bubble and squeak / hash browns.

Onion rings.

Bean fritters. A tin of aduki beans, drain then mash half the tin. Pull the mashed and unmashed beans together with mashed and season, form into patties and fry or bake.

Aquafaba omelette.

Chopped and fried veg, mushrooms, onion, spring onion, peppers, courgettes.

Halloumi.

It has the salty greasiness of bacon. More filling than mushrooms etc. We have halloumi butties for breakfast when camping.

Sautés spinach, onion and mushrooms in plenty of butter with a thick layer of cream cheese (also works well with a layer of smoked salmon for non veggies)
